    Japanese Curry
    Ingredients
    For The Curry
    1 Tbsp butter
    1 large onion, sliced thinly (approximately 10 oz)
    1 tsp grated garlic (approximately 1 clove)
    1 tsp grated ginger
    1/4 tsp salt
    1/8 tsp black pepper
    1 1/2 cup water
    1 1/2 cup chicken stock
    1/4 cup sake
    4.2 oz. Japanese curry block (mild or hot)
    For the Starch
    1 cup warm cooked rice, 1 portion cooked udon (cooked by following the package) or any starch you’d like to serve with
    For Asparagus & Tomato Curry
    1 1/4 cup curry base
    4 to 5 asparagus, cut into bite size
    4 to 5 cherry tomato, cut into bite size
    For Pork curry
    1 1/4 cup curry base
    4 oz shabushabu pork
    1 poached egg
    For Tonkotsu Curry
    1 1/4 cup curry base
    1 serving tonkatsu, Japanese style pork cutlet, cooked sliced and ready to go
    dFor Karaage Udon
    1 1/4 cup curry base
    3 to 4 pieces karaage
    1 poached egg
    1 green onion, chopped

    OH MY GOD - THANK YOU!! I lived in Tokyo for 3 years (2014-2017) and have sorely missed Coco Curry. Always assumed "it was too hard to ever make on my own" - but you just made my dream come true! I got my Vermont Curry packs via Amazon - reasonably priced. I ended up making your base recipe, then adding potato and carrots, let them simmer for about 20 minutes as the rice cooked. Turned out beyond delish and now I am SOOO excited to step it up - add a poached egg, thin sliced beef, maybe mushrooms, heck, even cheese like Coco Curry does! At any rate, I am forever in your debt for showing me the way with this Japanese curry. Thank you!!!

    Uggggghhhh I miss Japan!! What a blessing to experience this country because of the military! We LOVED Coco”s curry house when we were there! There was also a chicken cutlet we used to eat with ours! Ohhhh sooooo Good!!! Thanks for sharing... I’m making me a batch on Thursday!!!

    I use golden Curry and I have been using it for a few years. I usually do pork with cabbage, onions and really whatever veggies I have around. I made some last week to go over home made fried rice. Iight try the Vermont kind now to compare

    While curry may originate in India and spread throughout the world from there, it's so unique and amazing to see many different cultures' interpretation of it and how different the recipes have become from each other! I have tried Indian curries, Japanese curries, Thai curries, and others and all are very different, but all so delicious. Thank you for sharing these recipes! I am defintely going to try these this weekend! :)

    I tried this recipe with a chicken cutlet instead of pork (that’s what was available to me at the moment) and it was delicious and easy!! This will definitely be a staple quick meal. It took no more than 45 minutes for me to make it from start to finish (including the rice and fried chicken cutlets). Thank you so much!!

    Thanks for the video ! I have experimented with different curries, including those curry blocks. Honestly in my opinion you can make a quick curry from scratch that tastes as good as those blocks. Just use the S&B curry powder, and then thicken the curry with a simple roux made from flour and butter. (Disclaimer: I don't claim to be an expert chef, this is just based on my experimentation). I use the S&B curry powder from Japan, I've seen an "Oriental curry powder" advertised, but I don't know if it is the same.

    My son's grandmother is Japanese, and she taught me how to make curry stew. She makes the curry base with S&B golden curry, and adds onions, carrots, potatoes and chucks of chicken breast. Pour over rice and eat. It's so good! I make it at least once a month. My husband loves it too! It's also really good poured over a cheddar cheese omelet, which I found out with some leftover curry stew.😀

    I miss Coco Curry so much. I lived in Japan for over 7 years and had Coco Curry all the time. I ate the level 10 spicy curry. It was really good. Thank you for your video.

      juny23326 They don't really do that anymore in Japan, except in a few restaurants, but I saw them do it on a tv show and basically they just make dark roux and add curry powder. Its actually important that it be English style curry powder, like Coleman's, not too authentic. If you need instructions on roux, I recommend Alton Brown's oven method.

      EDE this is considered "from scratch" lol. no one makes their own japanese curry, it wouldn't be authentic 😜

    I just made a golden curry but I used vegetable stock. 😀 the Japanese Kare taste so good, even with steamed rice or bread made me full!
    It's so good for breakfast, lunch and dinner. Your recipe is GOLD!

    I prefer the Japanese curry rice with Chicken Katsu. Because Chicken Katsu mixing with curry and rice is good combining and the taste is really appetizing.

    Whoa, I’ve been asking for yourJapanese curry recipe since you got back from japan. Before even! Tonight I broke down and made curry the same way I usually do. Big pot so I can take it for lunch all week. And within an hour you upload not 1 but FOUR curry recipes!!!
    And do we really need a Japanese version “tonkatsu” (katsu?)? Probably not. Do we want it? You bet your “nooder” we do!

    My friends I got close with recently are really into all things Japan so it was a really different change getting to know them but they took me to a Japanese restaurant here in Melbourne (Australia) called Okami and this was the first time I had ever eaten Japanese food. I fell in love with the Katsu, so tender inside and the crumbiness on the outside.... Definitely wanna try the Curry Katsu :)

    I recently noticed Vermont curry at my preferred grocery store and decided to try it after viewing this video. It's now my favorite curry. I used to buy s&b from Korean grocer but now I can have Japanese curry anytime without making a special trip to an Asian grocer 😋😉

    Thanks for this recipe! I made it, and it came out delicious! I added potatoes and carrots. I think one thing I underestimated was how long it takes for the onions to caramelize 😭 But it was so worth it!! The first time I got too impatient and didn't let it caramelize and just added the soup, but the second time I let it caramelize and boy does it make a difference!! Thank you for this recipe it's delicious and I will make it in future!!!

    At home i do the same.
    Well, i do it from scratch whenever i have some leftover stock from making something else. But i do a whoe bunch of the base and freeze it in one serving portions. Then, whenever i'm in the mood for curry, i grab one of the portions form the freezer and add whatever ingredient i feel like that day.
    I was also isnpired from eating at a coco ichiban during my trip to Japan.

    Just finished making and eating the Curry.
    2 ways.
    One, over Sushi Rice using Your Chicken Karaage Recipe side of sliced Raw Cabbage & Topped with an Onsen Egg, the Other, Served over Udon Noodles with the Onsen Egg. I was really surprised at how much I loved it with the Udon!
    Absolutely Delicious!

    Here in Hawaii I grew up eating this. All the plate lunch places or other restaurants serve Katsu curry. They make exactly like you did except usually with chicken instead of pork:) the Vermont curry & S&B are the same boxes I buy from the super market when I make it at home for my family. I prefer Vermont too! Slightly sweeter & soooo yummy!!

    In Japan the curry udon is made with a base of dashi and a little bit of mentsuyu as well.
