Hi! Thank you for taking my class! I think it would work well to use raspberry or blueberry powder in the recipe instead of strawberry powder. You can grind freeze-dried raspberries or blueberries with a spice grinder to make the powder. I don't recommend fresh berries as it will change the chocolate texture. I hope it goes well!!
How do you do a clean cut on the nama chocolate? I tried the warm water and cleaning the knife method but it still ends up so messy 😭 With the brandy shot (1 tablespoon or less) that doesn’t really freeze, it’s almost impossible to get a clean cut even if I put it in the freezer for several hours/overnight.
Thank you for your comment. I would try reducing the amount of cream to see if that makes the nama choco firmer. Plant-based cream does not work as well as dairy cream. Also, different chocolates have different levels of cacao so I recommend using chocolate with a higher percentage of cacao, the more cacao that is in the chocolate the firmer it will be.
