I’m going home to a roast, carrots, taters and onions cooked in my crockpot. I work 12 hours so I had my husband turn it from warm to low so it could cook 8 hours then he could turn it back to low until I get home. I’m starving just thinking about that meal. I love crockpot meals. You’re right, the house smells so good when you come home and I always have a good feeling knowing that supper is done already. I’ve got to try this. I usually cut corners and use store bought pie crust and make a pot pie in my deep pie plate. It’s good but not as easy as this. I’m trying this recipe next week. The rain looked so good. I like this recipe. You ought to try putting cranberry sauce on the side to add to your spoonful of goodness. My mom always served it with our chicken pot pies.

Thank you Lori, for another quick and easy recipe. I dug out some chicken breasts that were hiding in the bottom of the freezer and put this together. I used my instanta-pot and then put it in a casserole dish and finished it in the oven because I like the topping browned. Much appreciated! 😊🇨🇦

This recipe is so simple and I bet it's delicious with dumplings on top. I've made it in the oven topped with tater tots. I loved the view from your porch. I think it would be heaven to sit inside the screen when it's raining like that. You wouldn't know you needed rain -- the plants are beautiful!
Its been hot with high humidity here. More rain than we've seenbin 10 years of drought. Lake Mead by Vegas actually rose over 18 inches. I'm so grateful! Feeling very blessed. Aftef years of trying to grow a garden in 5% humidity, this year, for first time the corn is over 5 feet tall. Its hard work, but worth it, still just to hot to cook. This crock pot chicken pie looks like another blessing, so I'm cooking it tomorrow, with some home made buttermilk ice cream. Wednesday this week will be a celebrstion of the goidness we've been provided. God bless!

Chicken & dumplings & chicken pot pie are my two favorite comfort meals. I'm old school too, born & raised in the South, dumplings are rolled out thin & cut by hand; never made from a canned biscuit. I just couldn't, my granny would have had a fit! LOL.

Watching other southern channels they make biscuits that are like strips of dough. These are the type of chicken andvdumplings I grew up in. We used bisquick to make them. My Mom her friend and I went to cracker Batrel one day and my Moms friend ordered chicken and dumplings and when it arrived it was the dough syrip type of dumpling and she was not happy. She expected these drop type and I told her Cracker Barrel cooks southern food and in a lot of the south this is what they call dumplings. I doubt she will ever eat dumplings at Cracker Battel ever again, lolol. I love good chicken and dumplings like this dish you made but living alone it's hard to make single servings of many dishes. Keep on doing your thing Miss Lorie. I love watching your videos and learning new recipes. I love to cook but woukd rather cook for a family than just for me. We need rain badly. Only one storm since the end of May. My garden is a disaster this year. Tomatoes ate small as we as squash and other veggies. I pray Dear Lord to send some rain.
The flat dumplings are what I was raised on in Georgia, the thinner, the better. I never saw dumpling balls until I got married and went to his family in New York. I had the same reaction as your Mom, “these aren’t dumplings!” lol I guess it’s what you’re used to eating. Many Blessings!

@@ritahunter3177 I live alone too. I make batches of taco soup, beef stew, cabbage soup, chicken soup in my slow cooker (not all at once) but whatever I feel hungry for. I buy small containers from Dollar Tree...can't recall if they're 3 for $1.25 or 4 for $1.25. I have over 20 now. Each container can be filled to 1.5 cups. 1 c is marked on the container, and that's good for one serving for me. The containers stack easily in the freezer too. I just pop the frozen soup into a bowl, cover with a microwaveable lid and microwave it for about 7-7.5 minutes. Not sure if you can make a batch of the dumpling batter and freeze it too, or buy Pillsbury Flaky Biscuit dough, bake them, freeze separately and just pull one or two out, let thaw for 10 minutes and add to your soup about 10 seconds before it's ready to come out of the microwave or just cook with your soup an additional 10 seconds or so. I bake my own bread too, but slice it up and have to freeze it...it only takes about 10 minutes or less to thaw, or I just pop it in the toaster and it thaws and toasts just fine.

That is a good meal to feed the masses! I have taken it to church pot lucks too. I had homemade fried chicken with corn and orka and my carrot raisin salad. No I didn't make it. Ole Slowpoke went and got it at a restaurant that has the best chicken on Tuesdays. I had been wanting it for a month, especially the carrot raisin salad. Oh my PRAISES for the rain!! I grew up in the upper mid west (MN) n momma would make dumplings n chicken too n yes delicious it was!! I’m slowly getting those home cooked meals from scratch on our table here on the East coast (MA) n in just a couple yrs were looking to buy 10-20 acres in SC n start us our homestead, thats our goal.

Mom and I had never attempted a lemon meringue pie before, so we were a bit nervous. Your recipe is so easy, and it came together with no problems. We made it for my honorary uncle who'd helped my parents with a few big tasks. We can't wait to hear how much he liked it. We tasted a bit of the filling, and it is absolutely amazing! Not sure if you can make a batch of the dumpling batter and freeze it too, or buy Pillsbury Flaky Biscuit dough, bake them, freeze separately and just pull one or two out, let thaw for 10 minutes and add to your soup about 10 seconds before it's ready to come out of the microwave or just cook with your soup an additional 10 seconds or so. I bake my own bread too, but slice it up and have to freeze it...it only takes about 10 minutes or less to thaw, or I just pop it in the toaster and it thaws and toasts just fine.

That is a good meal to feed the masses! I have taken it to church pot lucks too. I had homemade fried chicken with corn and orka and my carrot raisin salad. No I didn't make it. Ole Slowpoke went and got it at a restaurant that has the best chicken on Tuesdays. I had been wanting it for a month, especially the carrot raisin salad. Oh my PRAISES for the rain!! I grew up in the upper mid west (MN) n momma would make dumplings n chicken too n yes delicious it was!!
I’m slowly getting those home cooked meals from scratch on our table here on the East coast (MA) n in just a couple yrs were looking to buy 10-20 acres in SC n start us our homestead, thats our goal.

This is a great dish to premake and freeze too. I'd make a few, freeze, and take one out when church family falls on hard times. I gave it to them with thawing and heating instructions. This is comfort food. ♥️ 🙏

Mom and I had never attempted a lemon meringue pie before, so we were a bit nervous. Your recipe is so easy, and it came together with no problems.
We made it for my honorary uncle who'd helped my parents with a few big tasks. We can't wait to hear how much he liked it. We tasted a bit of the filling, and it is absolutely amazing! So perfect with the fresh lemons!
