We put the clams in a pot of boiling water for just a minute or 2 until the shells open. Makes it much easier to shell, clean & does get a bit of the sand out. Sometimes we just pour the boiling water on them in the sink and they open right up. The horse clams and cockles make a good chowder.

At 2:38 Taku talks about being sustainable and back filling holes, and demonstrates once again, and as always: responsible foraging/fishing/clamming. This is a big part of why we like him and his company so much. But aren't those old badly filled holes right behind him? I've never been clamming, not yet, but I will. So, are those tiny craters in the background normal? Even after people backfill their holes and the next tide has come? Maybe the landscape gets pockmarked in a best case scenario? Are those tiny craters the result of previous clammers who did, or didn't backfill their holes, I wonder? Looking forward to being a dirty sustainable ethical clammer one day very soon.
I was up in WA for the 4th and caught a geoduck and some giant cockles. Wish I had seen this video before then because our cook definitely did not do our catch justice! Geoduck is definitely best as carpaccio, not sautéed. Really enjoying this channel!

What do folks usually do with the clam shells?I think with much less soy sauce, I'd prefer the Asian style, but when you added Parmesan to the Italian, you kinda elevated the Italian dish for me. I find Soy Sauce excessively salty these days. As I youngster, I didn't mind so much, but these days, I prefer way less salt for flavor.
