My headcanon:
V1 was the only machine that tried to save people from rogue machines, yet he lost the battle and went offline.
After he went back online, the humanity was already extinct. After traversing the barren lands, he found out that all machines went to hell. And now so will he.
After finding out that some people are still alive in hell, he thought that not all was lost, but not until these people began attacking him, these so called "Husks". He realized that there was nothing he could do but to put them out of their misery.
Then there are demons, who V1 doesn't see as humans
His vengeance to kill all machines is still there, and so begins ULTRAKILL
Edit: I remembered that Minos Prime's speech contradicts my theory, so now it's kinda outdated :/

I have mixed opinions about this, it would make more sense for it to have been V2 instead of V1 because if V1 tried to protect humanity then the other machines may aswell have given up AND V2 was made with the purpose to defend and protect unlike V1 whos only purpose is bloodshed

"Mankind is dead" humanity is gone.
"Blood is fuel" your only hope to live is blood
"Hell is full" and hell got all the blood you need.
