- A properly retro, no-bake lemon cheesecake bar recipe. Digestive/Graham Cracker base, topped with a mix of lemon jelly/jello, cream cheese and evaporated milk.
Ingredients
8 oz/225g Digestive biscuits or Graham Crackers
4 oz/110g butter
3 oz/85g lemon jelly (lemon jello)
4 fl oz/120ml hot water
8 oz/225g cream cheese
5 fl oz/147ml evaporated milk (a small can)
1 tbsp lemon juice
zest of 1 lemon
3 oz/85g caster sugar (superfine sugar)

Can't find lemon jelly crystals, can I use traditional jelly block
I have never tried it with block jelly, I’m afraid, so I can’t guarantee you’d get the same results. Sorry!
Can you add double cream to this cheesecake recipe?
Sorry, I've never tried it with double cream, so I'm not sure how that would come out.
