No-Bake Lemon Cheesecake Bars | traybakes & more

A properly retro, no-bake lemon cheesecake bar recipe. Digestive/Graham Cracker base, topped with a mix of lemon jelly/jello, cream cheese and evaporated milk.
Ingredients
8 oz/225g Digestive biscuits or Graham Crackers
4 oz/110g butter
3 oz/85g lemon jelly (lemon jello)
4 fl oz/120ml hot water
8 oz/225g cream cheese
5 fl oz/147ml evaporated milk (a small can)
1 tbsp lemon juice
zest of 1 lemon
3 oz/85g caster sugar (superfine sugar)

Can't find lemon jelly crystals, can I use traditional jelly block

I have never tried it with block jelly, I’m afraid, so I can’t guarantee you’d get the same results. Sorry!
