I put mine fat side up. I try to get a good bark on the non fat side and let the juice from the fat run down keeping it from cooking to fast. Or at least that's how I look at it.

The side tray is a must instead of the regular handle, great 15$ investment. Great customer service also. Gotta love Oklahoma Joe
