Thornfinn is honestly a better fighter than Askeladd it's just he couldn't focus whenever they fought he let his emotions run wild which made it easy for Askeladd to read his and predict his attacks.

But everytime during their fights were Thorfinn were calm and collected for a few seconds, his instincts told him to stay away from him. In episode he started good then he stepped back because Askeladd was about to catch him and he stay away not knowing what to do and in episode 22 right after Bjorn death, Thorfinn was sweating and couldn't move because Askeladd had a serious face that he never seen before. So it's not really Thorfinn is a better fighter it's just that Askeladd doesn't bother and chooses the easy route
Fun fact askellad offered to follow thors after he lost coz he believed that he was a leader worth following but he could see in his eyes that he wouldnt say yes and then played it off to say face with his crew but he truly respected him in that single fight and first meeting
And you gotta consider how long he'd been living the life of a warrior and how many people he'd already killed. I'd imagine at some point the killing just started to blur together so for Askeladd remember Thors even though they only had 1 brief interaction years prior really shows how much he respected Thors as a warrior.

He was trying to drive home the point that as long as Thorfinn kept rushing in recklessly letting his emotions cloud his judgement he'd never beat him even though Thorfinn was the better fighter at that point.
