  • Roasted Veggies w/ Greek Yogurt
    2 Bell Peppers, chopped
    1 Red Onion, chopped
    2 Zucchini, chopped
    2 tbsp. Olive Oil
    ¼ tsp. Salt and Pepper
    ¼ tsp. Red Chili Flakes
    ½ tbsp. Fresh Rosemary, minced
    1 tsp. Fresh Thyme, minced
    1 C Low Fat Greek Yogurt
    Salt and Pepper
    Fresh Parsley
    Pre heat the oven by setting the broiler on high. Place the first 8 ingredients into a bowl and toss well. Place on a sheet on a sheet pan and then under the broiler. Cook for 15 minutes tossing every 3 minutes until well charred.
    Mix the yogurt with a pinch of salt and pepper until smooth, spread on a platter and then top with the roasted vegetables. Garnish with fresh parsley.
