For the leftover spring roll sheet, you can try making these 1) put seasoned/ salty seaweed on top of the sheet -> dry and then fry them! (This makes a delicious snack) 2) cook potato curry stuffing and wrap it in triangle shape (we called it as samosa here) 3) try making popiah! These sheets are originally used for this dish. There’s wet and dry (fried) version. Both of this is delicious

You can make Vietnamese fried spring rolls (Cha Gio) with the spring roll wrapper or rice paper sheets. Rice paper sheets are going to be the original traditional way of making Vietnamese fried egg rolls/spring rolls. 1 lb Ground pork, extra thin vermicelli noodles, shredded cabbage, shredded carrots, wood ear mushrooms optional, diced onions or shallots, diced garlic, garlic powder, onion powder, fish sauce (3 crab brand), sugar, pinch of salt, black pepper, 1 or 2 eggs. Egg wash to seal the end of wrapper. Adjust flavor to your liking. Deep fry in Vegetable Oil.

Spring roll You should wet your towel without adding water to it Squeeze it well Place it on top of the rest of the dough so that it does not harden It gets corrupted and you can't shape it While you are making the dough with your hands

To keep the garlic from flying when smacking them I usually use the the blade of the knife (not the sharp edge) to smash them and then chop. Been a lot easier for me 😅
