Would it be beneficial to have the driver's controls to operate the turret/slides be based on the end position, not the angle of the turret and extension of the slides? I feel like that would be better because then it's all field-relative and the turret won't feel super sensitive. (I, of course, know nothing about this so if I'm completely wrong then correct me or ignore me lol)
We are currently exploring this. You are correct that we are currently just adding offsets to the pose for each individual aspect. Also, the turret and slides feel super slow to adjust and that is why drivers miss. This will be smoothed out when they have time to do more practice.

We have force sensors in the intake and we have custom splines that have the greatest likelihood for the robot to encounter freight in the warehouse.
