LiveKit is horizontally scalable, so as their website notes you can run it on one node or 100 nodes with an identical configuration. Sure, you can relay RTP without storing it. LiveKit can handle that although depending on the format you might want to create a PION WebRTC clinet. Other alternatives include ffmpeg or gstreamer.
