    Ingredients
    180g (1 1/2 cups) rice flour (粘米粉)
    2 tbsp corn starch (玉米粉)
    2 tbsp tapioca flour (木薯粉)
    1 tsp salt (盐)
    1000 ml water(清水)
    1 tbsp oil (油)
    Filling (馅料):
    A little bit of oil(少许油)
    50g (5 tbsp) diced dried shrimps (虾米洗净沥干,切碎)
    2 spring onion, diced (2棵葱,切粒)
    Seasoning (调味汁):
    3 tbsp light soy sauce (生抽)
    A little bit of pepper (少许胡椒粉)
    150ml water (水)
    1 tbsp sugar(糖)

    Thank you Katherine for the recipe...!!! I also did not know how to prepare this but now I know...!!! Thank you... I am also trying to write my family's recipes to pass them down to my daughters and I know that I need help badly in many ways, that is what I am going to do right now, try to help you with your cookbook... In English the word "shrimp" is already a plural so it doesn't need the "s" at the end... It is very much like the word "police..." Shrimp, moose, sheep, police, sugar, butter, honey, and many other words do not have plural; they are called “mass nouns,” that is, nouns that don’t have a plural form in English and can’t be used in plural or with plural verbs... Mass nouns are singular in form... Please forgive me for the correction but don't feel bad or alone... Many people ignore this rule in America, particularly in those parts of the country where top education is not quite what it could be... Love you...!!!

    I tried the recipe and my Cheong fun turned out very nicely even though I used a metal pan and a porcelain plate to steam the Cheong fun. Not perfect but good! Thank you

    It looks delicious and seems so delicate and hard to roll.
    Has anyone ever tried to make them thicker, like instead
    of just two ladles, make it three or four and the rolls will
    be thicker and easier to handle. I am sure the taste will
    be just as good!!

    As to what kind of cloth, there has been no answer. Also I see that the stainless steel pan is full holes. Did I miss something?

    我很想說我完全照作者的食譜做是不成功的,第一,調的粉漿比例太稀,基本上不成型,第二,照作者用一片白布,而且孔洞是很密那種,鋪在有孔的蒸盤上,然後一放粉漿便馬上滲透了布,流在鍋的水裡面,然後要把所有東西倒掉,換一个不透孔的蒸盤,這根本不是成功的做法!
