  • This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April. For our second and last video from Chicago, we have more cats, coffee and a little bit of chaos. We apologise for the varying audio quality in this video.
We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
As we are frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
In this video, Dylan brews coffee using the Tricolate, a metal V60, as well as a La Pavoni Espresso Machine. He uses a Wilfa Uniform for both filter brews, and a Sette 270 to grind for espresso. He heats his water using a Fellow Electric Gooseneck Kettle, and weighs dry doses and brew weights with an Acaia Lunar. This episode features coffee from three different roasteries; Lykke, Junto and Vivid.
We hope that you will enjoy this final episode from Chicago. We will be now be moving on to the next chapter of the series.

Starting 33:08 on brew ratio. Is the roast generally made for the brew ratio?

Really great video with so many lovely information and topics to think about. Thank you!
One question, Patrik. You mentioned you don’t like pre-infusion during espresso brewing, would you like to elaborate why? I’m an espresso brewer and I use the Flair 58 paired with the Weber Key Mk ii (2nd gen) which has variable rpm, that being said I grind with fairly low rpm to get a bit more clarity while still keeping a very good and velvety texture. Coffees I use are mostly similar to April roast level (Sey, La Cabra, Prolog, etc.) and I find that 5-6 seconds of very low PI of 2 bars of pressure (before I ramp up to 6-7), really softens down the acidity and pronounces more sweetness, therefore providing me a more even and balanced result in the cup. Curious to hear your opinion on this.
Edit: I also use the WW Unibasket if that gives you more context to my question.

We have a different taste experience with pre-infusions. That said most machines have some sort of default pre-infusion. The most important thing is that you enjoy the espresso you brew.

Thank you for watching. Yeah, a Wilfa grinder, lots of value for money.
