I'm a new subscriber - been a fan of your wife's for a while. I dig your channel. Dish looks good; if I may make a suggestion, try using San Marzano crushed tomatoes next time. There are lots of brands but Cento is my favorite. I promise ya, they'll change your life ;)
My mother has been on a low carb diet for a while, so all the pasta in our house is weird. I made spaghetti last night and I can't remember what type of pasta I used (maybe semolina), but it absorbed too much salt from the water and didn't have the right texture - also took 20 minutes to cook. Last night, I just had it so I only made a single serving of those noodles, but tonight when we all ate it, I made the chick pea pasta to go with the sauce..... and it was amazing. I think the chick pea pasta is even better than regular pasta. It blends so nicely with the sauce and has a great texture. If you want a healthier option, give it a shot.

Thanks AB, I made this the weekend with CENTOS crushed tomato as requested from the comments and it was amazing. I didn't need to add the olive oil...I used Grass Fed Beef and Italian. Amazing. I loved it! Will use this from here on out. Thank you and the BACONATOR!!! ON POINT!!!!

Yes that's what I use too grass fed beef also I don't put extra olive oil because the Italian sausage will release some more of its oils because she didn't let it cook that long and a tab bit of sugar to get rid of some of the acididity
Hey AB man from a Louisiana Boy that's been in Texas for 3yrs that is exactly how I make my sauce with one exception I add 2tbs of sugar to cut the acidity from the tomatoes and I add 1tsp of crushed red peppers just for that little KICK! Gonna be making this this week infact
My Italian uncle added his family's herb ideas to make the sauce - thyme, oregano, fennel, bay leaves, basil... also onion and garlic. Really good! I like to add bell pepper and simmer the meatballs/sausage in the sauce on low for minimum 1 hour.

I leave the meat grease in instead of the additional olive oil, lots of flavor in that grease/oil. Plus, needs more garlic and mushrooms. Thank you, great video

I love this recipe. Have swamped out the Italian sausage for another pound of ground beef. I use thin spaghetti for the pasta. I use angel hair for lighter sauces…shrimp scampi or prima verde.
When it comes to spaghetti one of the best ways to 'kich up' a recipe is to reheat leftovers by pan frying. Melt 2-3 tbsp butter in a skillet. Add a layer of spaghetti - Cover and fry over medium heat 6-8 minutes till it develops a thin crust. The crust gets integrated thru-out the dish so it isn't crunchy noodles - and it adds a great umami kick. I discovered this about 30 years ago, when i was stoned, hungry, and the only clean pan was a skillet. I've since learned that there Is a traditional Italian recipe that is similarly fried - called Pasta Assasina (Killer Pasta)

Try using salted butter instead of the olive oil. A very famous Italian recipe for pasta sauce starts with half a whole onion and adding a stick of butter then adding crushed tomatoes. I love your videos!

You don't need a potato smasher for your meat. I just use a spatula and just start on one end and just take a quarter inch at a time and just drag in down into the pan while its cooking and it will break it up into little pieces.
I would have used everything he used plus a little brown sugar to kill the acid in the sauce. Brown sugar gives it a little sweetness that I like in my red sauce. If you like it a little bitter which I do sometimes you can throw a couple carrots 🥕 in the sauce while it’s cooking and it will kill the acid in the sauce also. If you like heartburn then eat it the way he made it I’m sure it taste good but about 30 minutes after you eat it it’s time for some tums for me.
Level up with some chopped up marinated mushrooms. You can buy them store bought, but they are much better and really easy to make yourself. And I would use some of the marinated juice in place of some of the olive oil.

I just made this the only difference I used was I also sauteed mushrooms with my veggies for my sauce. I had a side salad with that good Hidden Valley Ranch, and I'm not even gonna over talk it. It was that fire!!! Can't wait to have it for lunch tomorrow!

I'm Italian. My relatives & I make our meatballs out of equal parts hot Italian sausage, ground beef & veal. I add a little dry red wine to my sauce. No sugar! If it's too sweet add a few springs of mint. We cook our sauce all day long. Serve it the next day with pasta! As you said, it's always better the next day! No jar sauce! They will kill you if they find that empty jar in the garbage! LOL
@@soniasg8639 I only use olive oil to fry the meatballs, garlic & sausage. I drain it off before adding the tomatoes which I can from the garden during the summer. You do not want greasy sauce. It won’t stick to the pasta. It’s about the tomato not the olive oil!

Try using canned whole san marzano tomatoes and crush them with your hands into the pot. The whole tomatoes are typically better quality than the crushed ones.
You are right Jeff. Made a recipe for sauce that called for san marzano tomatoes and simmer in cast iron skillet. It was absolutely amazing! Those are hard to find sometimes so good crushed tomatoes that AB used will do just fine as well
I made this recipe Christmas Eve and had some left over for Christmas Day. If you want to know what I and those who ate it thought of it, I ran out Christmas Day and immediately made another batch! I was concerned about all of the olive oil at first, but it is an exceptional dish!
Here's another next level application, substitute water for chicken broth when making mashed potatos/boiling rice.. Add salt, garlic & butter to the boil too(when it works for the dish)
I ain’t gonna lie: I use that cheap Ragu garlic and onion out tha jar sauce. BUT....I doctor it with fresh bell, onions, and garlic with seasoning of S&P and Italian herb mix. As far as meat, just ground beef, pepperoni slices, and Johnsonville Italian sausage. I also melt shredded mozzarella in with the meat. Your style looks good of course! 👏🏻👍
@@quiqui5793 AB has spoken about and done lower sodium options. Packaged broth and dry mixes, like Lipton, can contain a lot of sodium. Great flavor can still be achieved without them.
When I grew up my momma also mixed the noodles with her homemade sauce before serving. 6 kids and two parents... it had to go a long way. If she didn’t do that, the older boys would use up all the sauce. So the last ones to the table got plain noodles! It worked. And her batch was so big we’d fight over the leftovers the next day!! Gonna try this recipe.

I microwave it with some butter to make it more tasty and moist. It tends to be more bland and dry without it.

I've made this spaghetti several times. It's the ONLY sauce I will ever make. If my nephew goes back three times, it must be good! I am a new cook and thank you for making me comfortable in my own kitchen!

@@dirtydragon9 Yeah I was wondering what the point of dumping so much olive oil does. The Sauce looked great without it and you can see all that oil just sitting at the top. I think I'll try it without it.
I'd put a little dark or light brown sugar whatever you have. Not to make it sweet but to tone down the citrus of the tomato.

Add .5 teaspoon baking soda for every 2-3 cups of tomato substances. Stir until foam settles. This avoids adding sugar to the sauce.

I just made this the only difference I used was I also sauteed mushrooms with my veggies for my sauce. I had a side salad with that good Hidden Valley Ranch, and I'm not even gonna over talk it. It was that fire!!! Can't wait to have it for lunch tomorrow!

I'm Italian. My relatives & I make our meatballs out of equal parts hot Italian sausage, ground beef & veal. I add a little dry red wine to my sauce. No sugar! If it's too sweet add a few springs of mint. We cook our sauce all day long. Serve it the next day with pasta! As you said, it's always better the next day! No jar sauce! They will kill you if they find that empty jar in the garbage! LOL

@@soniasg8639 I only use olive oil to fry the meatballs, garlic & sausage. I drain it off before adding the tomatoes which I can from the garden during the summer. You do not want greasy sauce. It won’t stick to the pasta. It’s about the tomato not the olive oil!

Try using canned whole san marzano tomatoes and crush them with your hands into the pot. The whole tomatoes are typically better quality than the crushed ones.

You are right Jeff. Made a recipe for sauce that called for san marzano tomatoes and simmer in cast iron skillet. It was absolutely amazing! Those are hard to find sometimes so good crushed tomatoes that AB used will do just fine as well

This was the best spaghetti I ever made and my family loved it. No more jars of sauce for me.
I made this recipe Christmas Eve and had some left over for Christmas Day. If you want to know what I and those who ate it thought of it, I ran out Christmas Day and immediately made another batch! I was concerned about all of the olive oil at first, but it is an exceptional dish!

Liked the idea of thinning it out. However my opinion is water is flavorless. How about a cup of chicken broth or vegetable broth.

Here's another next level application, substitute water for chicken broth when making mashed potatos/boiling rice.. Add salt, garlic & butter to the boil too(when it works for the dish)
I ain’t gonna lie: I use that cheap Ragu garlic and onion out tha jar sauce. BUT....I doctor it with fresh bell, onions, and garlic with seasoning of S&P and Italian herb mix. As far as meat, just ground beef, pepperoni slices, and Johnsonville Italian sausage. I also melt shredded mozzarella in with the meat. Your style looks good of course! 👏🏻👍

When I grew up my momma also mixed the noodles with her homemade sauce before serving. 6 kids and two parents... it had to go a long way. If she didn’t do that, the older boys would use up all the sauce. So the last ones to the table got plain noodles! It worked. And her batch was so big we’d fight over the leftovers the next day!! Gonna try this recipe.
