Bulgarians are known for their flavorful and rich-tasting dishes, and our cauliflower in a jar recipe is no exception. This dish is an excellent way to preserve the taste and freshness of cauliflower for seasons when it is not as abundant.
Step 1: Ingredients
To start, you will need fresh cauliflower, vinegar, salt, water, and a few special spices to give that authentic Bulgarian taste.
Step 2: Cleaning and Cutting
Wash and clean the cauliflower well, then cut it into pieces or florets suitable for the jar.
Step 3: Pickling

Ingredients for Bulgarian Cauliflower:
- 3 kg cauliflower;
- 250 ml 9-degree wine vinegar;
- 1 medium chopped onion;
- 50-60 g red beet slices;
- 1 head of garlic;
- 15 g horseradish;
- 2 tablespoons mustard seeds;
- 1 tablespoon peppercorns;
- 60 g salt;
- 90 g sugar;
- 6 bay leaves;
- 1 tablespoon dill seeds;
For boiling: 5 l water and a large pot;
The quantities are corresponding to a 4,250 l jar.
