- LIME CAKE & GLAZE with CREAM CHEESE FROSTING
3 ounce package LIME JELLO
1-1/3 cups SUGAR
2 cups ALL PURPOSE FLOUR
1/2 teaspoon SALT
1 teaspoon BAKING SODA
1 teaspoon BAKING POWDER
1-1/2 cups COCONUT, Vegetable or Corn Oil
3/4 cup ORANGE JUICE
1 tablespoon FRESH LIME JUICE
1/2 teaspoon VANILLA EXTRACT
5 large EGGS
Preheat oven to 350 degrees F. In a mixing bowl place Jello, sugar, flour, salt, baking soda and baking powder and whisk together. Add oil, orange juice, lime juice, vanilla extract and eggs. Mix until combined. Pour evenly into 3 - 8" cake pans that have been buttered and floured or sprayed with non stick cooking spray. Bake 25 to 30 minutes until a toothpick inserted comes out clean. Cool a few minutes then turn out onto a cooling rack. While the cakes are still warm make a glaze.
GLAZE: 1/2 cup LIME JUICE, approximately 4 large limes
1/2 cup Confectioner's sugar
Whisk together and brush or pour onto cakes while they are still warm. Then allow the cakes to cool completely.
CREAM CHEESE FROSTING:
1/2 cup (1 stick) BUTTER at room temperature
1 - 8 ounce package CREAM CHEESE at room temperature
1 pound box Confectioner's Sugar
1 teaspoon VANILLA EXTRACT
Cream butter, cream cheese and vanilla with an electric mixer. Mix in confectioner's sugar until smooth. Spread between each layer of cake as you stack them and then frost the sides and the top of the cake. Enjoy

O noticed my darker kitchen too girl. I have a new camera and I believe the contrast of the outside sun darkened the kitchen. Gonna do some investigating. I didn't like it.
