    Skin-on is the best way need those good fats otherwise it dries, and helps cook better too.. You're seasoning is the best in the market thus far. love them.

    Best to use a greek yoghurt marinade with lemon,garlic and other herbs.Keeps it really juicy and tender.And flavour is awesome as well

    Add a cheap cake cooling rack in the bottom of the jumbuck, it allows for much better airflow, and it raises those coals for a bit of extra heat, after all you can raise to rod if you really need to.
    But I've found that with the coals raised a bit, it's definitely made the mighty jumbuck a lot more fuel efficient.

    With the mallee charcoal how much are you lighting? 1kg charcoal per 1 kg of meat?

    Its first time ive seen you. BUT, im a super fan, u have the same teaching and honest technique i use.
    Ive got a BBQ/Cooking "Gift" (but i dont do social media alot, except for family.
    I bought the rotisserie the other week, with a new smoker, but did my first "Brisket" It was great, but, i didnt achieve what i felt (and using Offset Jumbuck smoker, took more than 20hrs, and about 200+ in fuel.) So not happy. (i did record it, but just as personal learning.)
    HOWEVER, short cooked Ribs (pork) 2hrs roughly? I got it close to perfect. (i may have over done it, out of safety.) BUT, again, i have pics.
    I love to cook, but due to a surgery, i cant eat much (think, size of Palm, BUT, no liquid) so i use my Housemates for tests.
    MY No1: Is my "Reverse Seared TomaHawks!!"
    Its my best (and its on a Jumbuck 4 burner Gas BBQ from Bunnings.)

    How many kgs of gyros meat can you realistically fit on that skewer?

    What table/bench do you have the jumbuck mini spit sitting on please? I want mine to sit hip height - minimum - but only have an outdoor heavy duty folding plastic table. And I don't want it to melt lol So looking for an alternative that will work for me.

      Hi Mary, we usually put a sheet of metal down on top of any table we use to help protect the bench from discolouring/melting. Hope this helps!

    So, you carve in that tiny space?
    Do you place a tray under (between the meat and heat source) when carving?
    Could you complete the entire cook with out carving, then remove and carve it up inside?

      Hi Wind, he is using Stainless Steel Gyros Carving Shovel and Breville 'Easy Carve' Carving Knife and can't complete the cook without carving because the inside of the meat will not cook properly. Thanks

      Agreed... did it yesterday
      Sliced off the outside nest, it was perfect...
      But then the inside meat was like stewed... as we had the coals not hot enough....
