I have tried it, only made a quarter of the recipe though. It was a big success! The first time I made youtiao with the correct texture I want : crunchy on the outside, soft and chewy on the inside. Thank you so much!
One question, if I want it to be less tough or less chewy when it is cold, what should I do? Should I mix the flour with other kind of flour for instance? (I used 100% all purpose flour before). Thanks again.

I got question about kneading time. Each time you knead the dough does it have to be 5-10 min?

amonium is acting like baking power but smell stink
Amonium is an acting ingredient, acts like gas to make things rises. You can substitute it with baking powder or cream of tarter if you don’t have amonium. But there will be a differences to the cooking product. Amonium will make it more rich crispy in texture where as baking soda won’t.
But it won’t be hard to find…American store everywhere should have it.

@@itran888 don’t have to use too much of ammonia powder. I only use 1/4 teaspoon in every 4 cup of flour. By adding 2 teaspoons of vinegar to the liquid mixed, will eliminate the ammonia smell. Hope this helped.

I think vinegar is use to get rid of ammonia smell. If you don’t know what ammonia smells like, it smells AWFUL and I think ammonia is used to crisp up bread stick.

Inhalation of lower concentrations can cause coughing, and nose and throat irritation.
