@@veronicabrown11 here you go love: Ingredients 2 teaspoons olive oil 1 to 1 1/2 yellow onion, diced 1 1/2 stalks celery, diced (you can use dried celery, taste ain't the same) 2 1/2 cloves garlic, minced 1 teaspoon kosher salt 1/2 teaspoon pepper 1 3/4 teaspoon Chili powder 1/2 teaspoon cayenne pepper (use as lil or as much as u want) 1 lb ground chicken (you can use pork, I personally don't eat much pork so I use Chicken, or do some of both) 1 1/2 cups cooked white rice (I like to use rice cooked a day before) 1/4 cup chopped parsley 1 1/2 green onion, chopped 1 1/3 cup panko breadcrumbs (you can use Italian or Plain) once you play around with it a few times it gets better 2 eggs, beaten (I sometimes mix a lil heavy cream in it as well) I also sometimes soften cream cheese and mix that with all the ingredients and then fry them 2 cups oil for frying (I warm it up to around 325-350) just try one and go from there, they can burn fast Dipping Sauce: (I have 3 different ones, this one is the favorite for most) 3 tablespoons mayo (Dukes or Hellman's) 2 tablespoon sriracha (add more or less for your tasting) I like a fresh pico myself it's so easy to make, yes you can take a little while to make pico but here's my fast one, and tastes just as good 4 stem tomatoes (leave seeds in) 1 to 1 1/8 cup cilantro 1 red onion 4 Limes 1 Lemon 3-4 Jalapenos (whole, seeds, everything) you can add or take away depending your spice level 2 packs Goya seasoning 1/2 to 1 tablespoon of white vinegar 1/2 teaspoon salt 1/2 teaspoon black pepper 1/4 to 1/2 teaspoon sugar Blend it all, until you reach the consistency you want, I like mine in between chunky and not so chunky Also you can play around with these things, make it to where you like it, that's the best way I at times will also buy corn on the cob and roast it over the stove, cut it off the cob and put that in the pico, and sometimes I'll use one or two mini cucumbers diced up (if you were to add cucumbers don't put them in the blender with everything, just dice small and add to the pico when your ready to serve. I live in Tennessee and we just got over a winter storm about a week or so ago we had 8 to 10 inches of snow and then we got ice too. It was -5 degrees here at one point.
My daughter has been making these but because I'm not eating meats right now she used onions, rice, and bell peppers from what I can see with my eyes plus cheese.
