A big fan right here of Julien for many years. Watched all his shows. He makes baking fun and he is a very knowledgeable and funny guy. Wish he had more shows on UA-cam.
At 8:06. How is a French bakery run by two French people "unlikely" in the southern English coast? France is literally across the English Channel; this part of the England is the closest to France. I would say that this is the region of England where it is MOST LIKELY for one to stumble upon a business or organization run by French people. LOL.
I liked the French guy. Clearly has some ADHD going on--he's really hyper. He's also a bit too aggressive for my liking, what with that laddish horsing around with his baking assistant. But it appears that this man is a culinary genius--he had never heard of a rough puff pastry before, let alone a rough puff pastry cheese tart. And he nailed it perfectly on his first try, so much so that even the pudgy judge went greedily after a second tart during the judging at 39:22. When the food experts lunge at your food to get seconds, you know you're a genius with cookery.
Julian's son is just angelic, lovely episode.

Here in Sweden, saffron is traditionally used only in sweet cakes and breads, for Christmas
0:56 the background music feels like watching House Hunter
Now I want cake 🍰
Kind of funny that one of the best bakeries in Britain is French. I wonder how they would do at making sausage rolls and meat pies.
LOL. It's kind of how some of the biggest banks in France are British. Each nation does the thing it's very good at...

All that sourdough needed was fresh butter...😊
The French invented puff pastry.
