    I hope you see this. In the USA, there is vinegar that is by the canning supplies that does not meet the 5% for canning. There is 4% or even 3% which if used can lead to botulism. Please tell your audience to make sure they are always checking the labels!!

      Hope this helps. Be sure to do both steps .🙏☺
      💥4% vinegar conversion formula for canning
      🔸1) Multiply the volume of 5% vinegar in the original recipe by 1.25 (because 5 divided by 4 equals 1.25). The result is the volume of 4% vinegar in your revised recipe.
      🔸2) Subtract the volume of 5% vinegar in the original recipe from the volume of 4% vinegar in your revised recipe. Reduce the volume of water in the revised recipe by this amount.

    I have never had any kind of smell left over from freeze drying my onions or broccoli or even garlic. Not even one time. My freeze dryer is running non stop as well. Goodness. I will have loads of food for my family for the winter

    Big giant Thank You, for the dill info. I always have tons of dill and no cucumbers yet. So cut the big heads off, froze as you said, and today went out and looked and my dill is now covered again with big giant heads! Who knew, well you did. So kind of you to tell me about this small but big thing for us northern gardeners!!!!! Jean Colorado USA

      @ jeanbrooks1617 - my grandma always dried her dill stems as well, because they have a lot of flavor too & they last that way for a long time- dry & in an air tight jar. Happy pickling!

    Both myself and my husband grew up eating Mrs. Fannings Bread & Butter pickles (opposite coasts: California/Massachusetts). Years ago, it became almost impossible to find them, so we ended up switching to Mt. Olive and liked them, although not as much as the Mrs. Fannings pickles. This year is the first year I've made Bread & Butter pickles because we are so picky I thought the Ball book recipe wouldn't be good. Well, I have to say that they are DELICIOUS! Everyone that has tried them since I opened the first jar has loved them. I've now made 40 pints since the end of June! I hope you love them as much as we do.

    Chelsea---I made a batch of your refrigerator dills.....but made a mistake. You said "4 tsps of salt for every cup of vinegar"...and I mistakenly used the measurement of vinegar + water-----so in effect, I added double the amount of salt. Needless to say, when I tested them the
    next day (after realizing my mistake hours later), they were VERY salty. I used my leftover brine and added more vinegar and more water to equal the right amount of vinegar plus salt ratio and when boiling, added it to the cucumbers. They tasted SO much better when I tested them the next day. Still a little salty but that should dissipate over time in the jar, I hope.
    Anyway, it is supremely easy to make them and thanks for the recipe!

    Can you use the heat sealer on regular plastic bag, like Ziplock? I know they have a special plastic to make bags.
    Also, for those who don't can, but have an abundance of canning jars, you can get a lid attachment (and oxygen absorbers if storing longer than one year, and store in cool, dark place) for both regular and widemouth size jars, that removes any air, and "seals" the jar, until you want to use it. It works for both dehydrated and freezedried foods, and it takes so much less "hands on" time than canning, is safer, and the food keeps more of it's nutritional value.

    I like to powder my freeze dried zucchini and I use it in meatloaf instead of bread crumbs. I also use it as part of the flour in muffins or quick breads. I like your recipe for spaghetti sauce and use freeze dried squash to sweeten and thicken it.

    Your garden is gorgeous. My garden here in Pennsylvania is doing great as well. My Bush type cucumbers are 7 ft. Tall. My tomato plants are 4 ft tall. Would love to be able to have a larger garden, & enjoy it as much as you do. Thanks for sharing your love of nature.

    I am in zone 3b as well but in western Alberta, am really jealous of your garden, we had very late spring and then some pretty crazy storms with hail, i may get some veggies. but i wanted to tell you that i grow corn in rows and have had great success last year, i grow a short maturity sweet corn. happy harvesting!

    I have been using pH test strips for years, often needing to add NO lemon juice or citric acid to my tomatoes when canning. Great for checking the acidity of vinegar/water based pickles too.

    I done a whole freeze dryer of garlic, onions , beef… a little broccoli a never tasted flavor contamination…. I do a lot of fruits too

    I watch a video on utube that said to plant onions with peppers and I tried it this year and I had beautiful onions this year the biggest ones I've ever grown. Just harvested them today.

    It's the machine oil that gets stinky. We keep a second filter pitcher for stinky oil. We try to use the unstinky oil for fruits, etc, and the stinky oil for garlic, etc.

    If you feed hummingbirds don’t use organic sugar. It’s hard on their livers. Just use pure cane sugar (white).
    4 parts water
    1 part pure cane sugar.

    I have a volunteer pumpkin growing near the compost bin (where we throw our jack-o-lanterns. I cannot believe the size of the leaves. They are the size of dinner plates! Such fun.

    WELL YAY! I have been waiting for the B&B pickle recipe like a kid! One thi g fun to do with them when they're done is freezedryor dehydrate and powder them, then add the powder to cream cheese for a spread. Its great with cured or salty, smokey fish products.

    I did 5 trays of onions and green peppers and then the very next batch (after letting it defrost) I did a batch of mint. I never smelled the onions after the batch was done. And the mint came out perfect.

    Oh I miss having a large garden. The excitement and sense of accomplishment in putting up food for us and the feeling of control of what ingredients I used far outweighed the planning and hard work. I’m in my 70’s and have RA but I do still have an herb garden, and a few vegetable plants like potatoes, onions, carrots, summer squash, tomatoes etc., in high containers, along with my couple of citrus and fruit trees. I’ll never get rid of my avocado trees (I’m in SoCal). I’ve adjusted to having 3 upright freezers and 2 deep-chest freezers and I only really can meat now. My laying chickens have dwindled to just 6, no more meat birds. Chelsea, journal everything, tips and tricks, when you get the chance and insert Polaroids of the gardens. Your children and grandchildren will love you for it. From one gardener to another, I can hear the love and excitement in your voice and I know exactly why. You are such a joy to watch.

    Bread n butter pickles are my favorite too. Sometimes I like a dill pickle spear. My son in law LOVES whole crunchy dill pickles! My husband HATES pickles, of any kind!

    I find that freeze dryer does not smell it is the ice that melts that smell, so I usually try and pull the ice out as soon as I can take the tray rack out, then wash the machine out with Vodka. No smell at all.

    I love to watch you in the garden, I love gardening but I have the opposite problem to you. I live in Florida and it’s so hard to stop things burning and the grasshoppers eat everything. My peppers went wild this year I’ve had so many and the are still coming now, and I’m ready to plant my winter garden. I have one question when you say sandwich pickles do they taste like dill pickles? I really can’t stand the taste of dill pickles, to me they ruin the taste of burgers. But I love ordinary pickles like we Englishdo with shallots. We just put them in the jar with vinegar and sometimes pickling spice no canning required. By the way I now live in Florida.

    I live vicariously through you as I don’t have a garden. Just a 1/2 wine barrel with herbs. That’s ok as I live in an area of northern CA where I can get fresh local produce every day. Do you have help with your harvesting? You have such a large garden to tend to 🍅

    If you want to make bread & butter pickles but pickling cucumbers are hard to find, use Zucchini. They taste just like pickles. You can find recipes online. Cutting the into rounds with a ridge cutter and not using too big of Zucchini, I find the best and look & taste just like pickles.

    I've never had luck with corn either until I tried Orchard Baby....it matures in about 65 days. I would have had a great harvest this year if it weren't for the earwigs😢. Each stalk had at least 2 ears a piece. Maybe give it a try

    I have just begun the process of juicing my seaberries and one thing for sure, its an acquired taste. Thankfully, after many attempts of tweaking the recipe, we now find it absolutely delicious. Whew, cause thats a lot of picking. I am anxious to see what you do with yours. Have fun.

      I put the well washed berries through a masticating juicer.
      Our recipe:
      1/3 part simple syrup (one part sugar, two parts water) Its the two parts water that makes the difference for us.
      1/3 part pure seaberry juice
      1/3 part cold water
      Et voila!
      Chelsea, once your bushes are well established you'll be swimming in berries...we began with four bushes and are amazed at the amount of berries available for harvesting.

    Funny enough the cheap "tomato cage" is perfect for fat heavy pepper plants. Useless for tomatoes but great for peppers

    I had an issue with all my sunflowers. they are Dwarfs abut 3-4 feet tall and they all dropped over like yours did. Ill ahve to sent hubs out for some thick dowel rods to stake them up.

    Question: freeze dryed zucchini packages - is it accurate, that they have a seal like a "zip lock" but did you also seal by the sealing machine or was that sucking out air? Thank you!!!
    This was so full of spectacular garden images im rewatching it immediately.

      The sealer just seals - it doesn't suck the air out. As long as the food is dry and she adds an oxygen absorber, the food will keep long term even though there is air in the package. The ziplock is for later - when you take the food out of storage you can use a little at a time and seal it back up. 😀 Wouldn't you just love a freeze dryer? I'm waiting for the USD 500 version, ha-ha.

    its amazing that you can leave all your brassicas open and not have loads of white moths.......I have given up growiing cauliflower because of all the worms......what is your secret? I live in Okotoks....can't believe your beautiful garden/ Jill

      I don't think they have any white butterflies in their area due to the temp, I'm sure she mentioned it in an earlier video. So lucky, I have to sacrifice a couple of my broc/cab/cauliflower to keep them off the rest.

      I know she usually grows under a moth cover that looks like a mosquito net that’s held up by half-circle piping-you can probably find it in some of her videos from last summer because I seem to remember the moths being bad then 😊

      Chelsea said she hasn’t had many cabbage butterflies this year. The first one just showed up the other day. But, you can spray your plants with Bt to kill the caterpillars.

    I had 1 small picking g and 1 larger picking of .y green beans and then the Asian bottles have found them and my beets. The beats are still small and they are eating g all the leaves. Your garden looks wo derful.

    you really should look up "companion planting". Makes a great difference in a veggie garden to have the right plants partnered up. Onions is a not good neighbor next to peas. Peas like beans, carrots, corn, cucumbers, radish, turnip, mint, chives. Onions like, beets, cabbage, carrots, lettuce, parsnips, tomatoes, marjoram, savory, rosemary

      Same thing! It’s called German to differentiate itself from Roman or English chamomile, which is a different species and not safe for pregnancy (which is why it’s important to qualify between them).
