    I dont squeeze my briskets, but man, I want too! lol good stuff. 1855 puts out a solid cut.

    We see so many perfectly cooked brisket online at these incredible Texas barbecue joints, That are dripping with rendered fat. I can tell this brisket would have tasted incredible even if it didn’t come out exactly how you wanted it to.

      It did turn out wonderful! I was a little too hard on myself as I didn’t produce the brisket I’m use to on a new cooker. Practice makes perfect and I’m looking forward to the practice!!

      The brisket was way better than I give myself credit for. Not doubt after a couple more cooks I’ll have this smoker down.

      @@mikebowerstv It's takes a few cooks to figure it out. By then it's summer time and you start over.😁 I'll be watching to see how it comes out. 👍

    Ok, I can't believe you lit the fire with Fritos! Bahaha I have got to try that. Nice looking brisket though! Now I am hungry.

      Yeah Fritos will get the job done. I’m just glad it’s chili season or I wouldn’t have had any in the pantry.

    That looked great. Coming from a pellet smoker, how much better is meat cooked on the shirley? Is it worth the extra fussing with the wood and less sleep? Thanks

      It’s a lot of work but the finished product is so much better.

    You mentioned issues you were having with your thermometer? What did you do to fix the issues?

      There is a nut in the back to calibrate it. I adjusted it to read the temp based on my Thermpro’s location.

    If you haven't invested in a weed burner yet ide get one on Amazon. Gets my smoker up to temp faster and more fun than using charcoal

    How long did it take to get your Shirley fab

      8 days. I follow their FB group and their shipping company keeps some in stock so they can fill a trailer to the region they are delivering to. They will make an announcement if they have an extra smoker. Same price.
