Wow why did I choose chemistry
Don't fret! Chemistry is incredible, too. Even in chemistry you will keep falling into the same general problem, that of emergent phenomena. And you can always go metallurgy which is basically experimental soft matter physics on metals specifically, while studying phase transitions.
