There is a lot to unpack here, but there is one piece of advice I want to give and it's for all fighting games at all levels. Never assume you can't lose to someone worse than you and more importantly try to never even think that you are better than someone. That type of mentality leads to toxic thinking that stunts growth. It's best to stay humble since we all go through this process to get good. That process being losing, and losing A LOT. Learning defense in Tekken is HARD. To be honest even most of the high ranked players I have seen have very weak defense typically in Tekken 8 since many players still lack experience unless they played a lot of the older games. You asked a good question how people know how to defend against all these attacks. The real answer is to be hit by those attacks 100-1000 of times until you start to recognize the animations. In Tekken 8 most players just develop a good offense flow chart and just repeat that until it stops working. These players will rank up quickly, but will plateau then also not know how to improve.

Bro I do like 50% of optimal combos and in purple ranks. I just started playing a couple weeks ago.
Don't spend time on combos. Because I see you can do some basic ones. But optimal combos aren't important until blue and tekken king+.
Focus on punishing and plus/negative frames. You don't need to know the frame advantage exactly. Can see based on the move.
Even just 1/2 punish is good. Ideally get a launcher depending on the move.
You should also challenge a lot of moves with power crush. Especially in lower ranks you'll win the trade 80% of the time.

D Pad is better, it allows you to be more precise. Personally, I'm a fight stick player, but most of the better players I know use leverless.

Don't try to punish high or mid on Ling Xiaoyu, she's really evasive. Try to use more lows like down 3, forward forward 4, and df44.
King is always annoying no matter what rank you're on. He didnt "outgrab" you, btw, that was a parry. You also have a parry (back 1+2).

Don't focus on combos. It's good to have a couple, but it's better to learn how to punish and avoid damage as Lili.

Everybody hates king. Only thing you can do, it's crouch when he try to grab you.
