You can wash your plates. Use a little bleach and a scrub brush. Also, to get your plate to flatten out. Put boiling water in a flat pan that is larger than you cutting plate. Put your cutting plate in the water and place a heave pot on top of the plate to hold it down. You can fill the pot with water to keep it flat. Leave it for half an hour and it should flatten up some.
