Dilla(RIP), Premier, Large Professor, Pete Rock, LES, Buckwild, and Eric Sermon specialize in this area. Their beats allow the listener to follow and appreciate the MC's lyrics. The reason Hip Hop fell off is due to the oversaturation of production. Most of these Mid-West and southern producers only care about how good their production sounds rather then catering their beat to the rappers strengths. Instead of working with real lyricists and Poets to produce a classic record or album, these producers allow their egos to get in the way and many of them refuse to make changes to their production so it can fit the rappers style...they instead find lyrically challenged niggas like Chief Keef, Waka Flocka, Young Thug. etc and have them spit bullshit because they know their production will outshine those rappers lyrics. In order to make a classic Hip Hop record and it takes collaboration from the MC and DJ/producer.
