I completely agree with Joshua Blackburn. I was thinking about something like this watching the deer video. I’m actually surprised that there aren’t more views on this. Wonder if it’s bc Bison is a little more expensive.m so not that many people buy it. Oh man I get it every time it’s delicious especially from WF..!
I can’t stop watching you’re videos. You’re great at what you do and also very informative, I just started as a butcher 3 months ago I transitioned from being a cook for 11yrs. Thanks for sharing youre knowledge
That bison meat looks amazing I would.love to try. As an English butcher we don't have this so will be on my to do list!! That skirt steak and ribeyes had me drooling. Very good guys
I watched a lot of animal butchering vids before I found yours, you guys really do have some of the cleanest techniques. This channel has some of the best videos in general for skinning and breaking down a carcass, as well as butchering game.
Especially right now with what’s going on in the world with the coronavirus I think everybody would love to purchase their meats online!!! Plus you guys are great at what you do I think people would love it!!
Hey guys , been watching vids for a few months, were up by SHELBY, not to far , just work and grand baby’s, hope to get whole family together and make it down to see ya on a Saturday get together you guys have this spring / summer. EXCELLENT VIDEO AGAIN . GOD BLESS !!!
I have never had the pleasure of trying bison. Definitely want to now watching this. I was told that it's a bit gamey compared to cow beef but I love venison so I don't think it would hinder me.
I bought a bison ribeye for the first time today. Never had it before "no bison". After watching you talk about it, i'm looking forward to eating it. Thanks for the vid.
My friends a butcher and at times I visited him at work and watched him, ( do what he does), and he is fantastic at that BUT, you have a gift my friend you are crazy good. Thank you, Sal

I learn so much. Watching your videos. I have been processing my own venison for 15 years and well I am an amateur when I thought I was doing it correct LoL
@@williammcdonald6870 He didn't seem to be having any problems. Plus he had the two most capable knives AND a diamond sharpening steel. Did you even watch the video?
Beautiful work, and really helps me out with identifying the American cuts of meat. Never realised that the front leg of Bison or cattle are attached by a ball joint. I just presumed that they would be like deer.
Question: I see you often do this on top of a wood butcher block... Why wood vs. Poly or something else? And how do you clean/maintain it. Secondly, I would actually enjoy a video of you cleaning the trimmings... Curious how particular you are and where you draw the line on how much time you spend vs. How much yield you get.
You know I used to drive truck over the road and I saw this little mom and pop diner off of the side of the road on I five just before you get out of California Into Oregon and they have this big old sign on top say bison burgers and I stopped and it was the best bison burger I have ever ever eaten and I’ve loved bought bison ever cents but I’ve never got any anywhere cause I don’t know where to get it but I’ll find it one day I found out where to get beer I really love dear but man you guys did a great job awesome cutting I need to get some of your seasonings though and I will thank you so much God bless you guys
Man iam actually glad i found this channel while high af ..i can say they have taught me alot about breaking down animals... Dat knuckle and dnt forget the back straps ,fish tenders ..very informative for survival..
Very instructive vid for butcher and your offering various way to cut and use the meat. I had Bison once it was very much the best steak I every had. I fell a bit sorry for the Native beast. thank for your taking time to share your knowledge.
Once again guys thank you so much great job I don’t do this but I love to watch the process interesting to know how our meat comes from you guys to the table .
I wondered about silver skin and connective tissue in the grind. It seemed to me a good thing to remove because it would require long cook times to tenderize if it would actually break down. The stingy side was saying "Put in the mix!" Watching the video gave me time to think that through. I don't understand getting rid of the fat for ground meat. There is so little on the carcass and what is there would only improve the the flavor of burgers, meatloaf, etc. Too bad so many believe animal fat and butter is bad but vegetable oil (hydrogenated even!) and margarine is somehow okay. Thanks for the video. I hope to butcher several steers in the second half or last quarter of my life.
Great video, thanks. I hope to shoot one someday and will come back to this video. I think when you get to bison, it is better to cut them like beef than like elk or deer and this type of video really helps.
Oh My Goodness, I was more excited about the bones you were taking out, all I kept thinking about was what a FANTASTIC soup/broth those bones would make! I've never eaten Bison, but would like to, but I don't want to buy it ( if I could even find it) from a grocery store, I would love to find a farm that sells it, but probably none by me (NC). Wonderful watching you do your work. TY.
Debbie, check the ground beef section at Food Lion or Ingles for ground bison. Its usually in 1lb, shrink wrapped packages. If you don't see it, ask one of the guys in the meat section, they should know where it is.
Have you Guys ever thought of trying your hands at making pemmican ? In case your did not know pemmican is a Native American survival food made originally with Bison ( Buffalo ) . Basically its dried ( dehydrated ) meat mixed with melted suet and your choice of wild berry pepper or herbs. It lasts almost indefinitely and there was even a war over it during the wild west days. Since Bison is your cornerstone I thought you would have fun trying your hand at it. Many resources on youtube but my favorite is Townsends . Love your videos and Family fun.
Seth you are one of the greatest meat cutters around . I have learned a lot from you , Thanks
Happy to hear that!
Love watching a true master of butchering. Thanks, yup mouth was wartering.
This is one of the most satisfying and hunger-inducing videos I've ever watched.
غ
Anyone else think this guy should start a butcher school. I would definitely pay to learn this hands on
Joshua Blackburn don’t need a school. just go work for your local butcher or kill and process your in season ruminant.
Joshua Blackburn Absolutely!!!
I appreciate these gentlemen sharing this knowledge for free!

I was born and raised in Livingston Montana, ate a lot of buffalo growing up because the meat is commercially available there, love the stuff!
You ate "bison". There are no buffalo in America.
