I add chopped cabbage to my greens at the last 30-45 minutes of the cook of my collard greens, because they add body (and a little crunch) to the tender collard greens. The cabbage provides a balance in the texture of the dish and lets those who eat my greens experience the flavor of the tender greens but still have a bit of texture of the cabbage when chewing them along with the tender greens and meat. The cabbage takes on the taste of the greens, but it's cabbage. You don't taste cabbage. It makes for an amazing experience. Now, if you can distinguish the taste of the cabbage in your greens (Like I would assume Gissum did), that means that the cabbage was undercooked. I've been told that my greens were the best that they've ever had on all of the occasions that I have prepared and let people take some home. I tell them all that my greens are my mom and dads greens. My mom was born in Montgomery, AL (1936), and my dad was born in Harrell, AK (1932). I was RAISED by them in Milwaukee, WI., and that's why I LOVE this channel, because I can relate! All the drinking amongst the men, arguing with still maintaining the love.
