Defenders were always "faster" than their stats; Dede, santana, sakho, naldo, juan jesus, toprak, ogbonna and worst of all Diakite with 70 pace but must have had the ability to teleport as he'd just always be there, always catch you and just an absolute unit. The meta was 3-5-2 because the CBs were more than able to hold their own without the need for fullbacks.
