🍴 Ingredients:
🍅 3 tomatoes, skewered and grilled
🌶️ 1 bell pepper, skewered and grilled
🧅 2 onions, skewered and grilled
🧈 30g butter
🧄 Freshly chopped garlic or garlic leaves
🍅 1 tablespoon tomato paste
🧂 1 teaspoon salt
🌿 1 teaspoon thyme
🌶️ 1 teaspoon curry powder
🧂 ½ teaspoon pepper
🍝 Spaghetti
🧂 Salt (for boiling water)
🌟 Instructions:
Grill the tomatoes, bell pepper, and onions on skewers until they have a nice char.
Peel the grilled vegetables and blend them into a smooth, smoky sauce.
In a pan, melt the butter and sauté the garlic until fragrant.
Pour in the blended veggies, then add the tomato paste, salt, curry, thyme, and pepper. Simmer for a few minutes.
Cook the spaghetti in salted boiling water until al dente.
Toss the spaghetti in the sauce, garnish with fresh coriander or basil, and top with grated cheese. 🧀
