  • After years of feeding the saltwater hardhead catfish in Brook;s backyard it was time to see how these so called trash fish taste! Hardhead Catfish are so abundant and hardly ever consumed, as they are considered poor table fare. They are unregulated in the State of Florida. I show you how to fillet these catfish as well. I set out to turn this so called trash fish into a tasty Fried Catfish Po' Boy Sandwich with homemade remoulade and tartar sauce!

    I'm a Missouri boy, the way you clean your saltwater cats is the same way I clean freshwater ones. It's neat to see it because apparently it's a strange way to do it around here, lol. In my experience, the off putting flavors come from the meat that touches the skin (and the bloodline, obviously). I usually trim just above the skin, leaving that little bit of meat behind. I'm not a fan of skinned catfish, but once I started doing that, I really came to appreciate them. I can't wait to try with saltwater cats next time I'm in Florida.

    Here in tn there are alot of catfish being ate. I always put them in yellow mustard like you do with buttermilk, then dredge in cornmeal with 1/3 as much flour. Then they are great no fishy bloodline taste. Brookes father seems a great guy. Hes like me, he simply enjoys to eat.

    Thanks for letting the native Floridians in Naples know how good the catfish are. I go down there for three weeks around Xmas and fish the beach and they all say that you can’t eat that fish. Well now you showed them there good to eat. Just don’t let them know how good big pinfish are. Thanks Christian

    You're right about the tartar sauce, stuff off the shelves often have vinegar in it, and some places that make their own use lemons juice to add a little acidity without the vinegar twinge. I personally use no acid, a very similar recipe to yours, except I add about a tablespoon of chopped up capers.

    I've always heard bad things about salt water hard head cats. I ate them along time ago and they were delicious. Reminded me of the thin cut catfish fillets you get some places down south.

    LOL we went shrimping a few weeks ago. I threw my cast net on some bait and ended up with 50ish catfish. They were so heavy it was hard to get in the boat. Buy the time we got them out of the net they were mostly dead. So we filleted them with an electric fillet knife. Had about 8 people over for a fish fry. Everyone liked the catfish. Porgy was the favorite with Lane snapper a close second. I'll be honest I grew up in Florida and have always thought the catfish were trash. Fooled me it was actually pretty good. Thanks for sharing I've been watching you both a long time . Tight lines .

      I cringed when I heard that knife grinding on the deck. I thought to myself "Put a board under that fish before you cut the tail off". Dexter Russell knives deserve better treatment.

      I ended up in a hospital because of one. I’ve been stuck many times by ours in Ohio but when my hand got like it did I freaked out and went to the hospital....first time going to Florida.

    I've caught a lot of those hard heads before, but have never eaten them before. Do they taste similar to the freshwater variety? I'm definitely going to have to try it now. They really did look delicious. Thanks for the upload Vic.

      They look almost identical to the freshwater Bullheads we catch in Michigan, apart from the shape of the tail (square, rather than forked like the ones in the ocean). They looked pretty much the same inside as well as outside, and when cooked, could have easily passed for Bullheads.
      Bullheads are delicious, BTW, but, since they're considered a "rough" fish there are no size or bag limits.

    I have eaten plenty of hardhead catfish. I do the same thing i bleed them out by cutting off the tail. Only thing different i use an electric knife to Filet them out. They very good if prepared right and far as i see you did an amazing job.

    I had no idea there _were_ saltwater catfish!
    Apart from the forked tail they look just like our Bullheads here in Michigan. (Bullheads have a "square" tail.)
    Bullheads are considered a "rough" fish (or "junk" fish), but are actually _excellent_ eating, and quite easy to catch (particularly if you're nocturnal :)
    Years (and years) ago I had a friend whose parents owned an orchard (apples and cherries), and way back behind the orchard was a small farm pond (I now have two of my own!)
    When he was younger, he and his father stocked it with bullheads (it being too small a pond, and with only an occasional/"seasonal" creek feeding into it) to sustain anything less "robust" than bullheads).
    We'd go down there late at night with a pail, some worms, and a Coleman lantern, and go back with a bucket full of Bullheads.
    His father had put together a sort of "disassembly line" in their basement. The key component was a huge nail sticking out of a 4x4 post sticking up from floor to ceiling.
    We'd cut the skin around the "neck" and then hang the fish on the nail, then pull the skin off with a pliers.
    Then we'd cut out the vertical "prong", cut away the gut section, cut off the head, tail, and fins, and be left with meat, spine, and ribs.
    Before cooking, we'd cut through the ribs on one side and then "butterfly" the fish. Finally, roll in flour, and fry.
    The ribs would usually cook to a crisp, but if not, they were super easy to disregard when eating the fish -- just one "unitary" piece not much larger than a thumbnail and not really any thicker. The meat easily came off the spine. NO bones to pick out of your teeth -- and if you wanted to put it into a sandwich it would have taken less than thirty seconds to remove the meat from ALL of the bones (spine/ribs).
    The fish were absolutely delicious, and I've no idea where they got the bad rap for being something no one would _want_ to eat.
    The ones you fried looked about the same as Bullheads (if the Bullheads had been fileted).
    One thing you might want to try some time would be a good Baguette (either "store bought" or home baked -- they're really easy to make).
    A good Baguette will be _very_ "airy" inside -- very big bubbles, NOT a firm/solid loaf -- and the crust will be _very_ crisp.
    Instead of slicking open, I'd suggest using a fork, just as is done with an English muffin. Then, butter both sides, and put the fried fish into it. (Even just buttered _without_ fish they're amazing!)
    Use any condiments you prefer (I'm partial to cocktail sauce, usually just made ad hoc from ketchup and horse radish), but even with nothing more than a buttered Baguette and crisp fried fish you will have people asking for seconds (and thirds!)

    There actually a better way to clean catfish first u chop there head of cut down the middle of its stomach and take out the guts and then all u have to do is peal of the skin

    In Louisiana we ONLY us corn meal for fried fish. (North Louisiana) I’ve had fish many other ways, but cornmeal fried is my number one favorite. You made my mouth water for a good catfish poboy. Glad y’all used it. Love from Louisiana

    Awesome, crazy and super unique. Most do no have the guts to eat them. We have all been told many times the meat is terrible, without ever trying it. So we have a bad tast in our head. I think it's pretty cool that you went for it. Good stuff

      danthebeeman Been finned bunch of times myself... It sucks. Scrape a little slime off the fish and smear it on the wound, stops the pain immediately. 🤷‍♂️ Also, seen a guy get blood poisoning from catfish fin. ✌️

    White bass, blue cats and flathead cats all have a similar bloodline. All you have to do is take a very sharp fillet knife and filet the red meat off the fillet

      The best ones are sailcats ,they get up to 10 lbs.,,how you know the difference is they have long fins,and they are good eating,big no bone fillets.!

    The next time you fry them, trim out the bloodline completely and then soak them in buttermilk and some Louisiana hot sauce mixed with the buttermilk. Then batter and fry. It’s good. ✌️

    If you put your fillets in a pan and just cover with water. squeeze juice of 1 lemon and let soak 1 hr. It will remove the blood line taste.

    When I was in high school fishing with my father, we would often stop and catch sail cats for dinner on the way home at the end of the day if we didn't catch anything better to eat. They are great fried up in cormeal

    I cook these sometimes in fl, I still prefer snapper, but these have a slightly flakier texture, maybe a tiny bit more fishy, I still think they taste great though

    Hey All!...glad to y’all are doing good during these uncharacteristic times.
    Dad is funny 😂🤣😂...y’all call them “pull boys”...but...if y’all grow up...up north in the city...we call them fish hoagies...and...you can find really good fish hoagies just about everywhere in the neighborhoods...you can’t go to the tourist sights...ya have to go deep in the neighborhoods...😄
    But...I did learn something today...I never knew there was a such thing as “saltwater catfish”...there’s just lots a freshwater around me...but man!...I would like to try some of that salt-cat...😄
