Hello Carol, if you want crispy sweet potato fries, just coat them in corn starch before you fry them. Also, you have to fry them twice, but every time you cook them in oil, you have to dry them with a paper towel.
I've been putting the fries in the microwave for a bit first, then only have to fry once. They're pretty good made in the air fryer.. I've cut down on deep-fried foods. Happy New Year God bless!🕊️

Everyone's recipe for collard greens is different, I've never been to two places, or homes, that make it the same. It all boils down to finding a place that makes it the way you like it.
Savory with a splash of vinegar and pepper flakes and jalapeño. With a big meaty turkey leg cooked with the collards, and a chopped onion, garlic. Then you debone that leg and mix back up with the collards. And then you make some cornbread! Perfect winter dinner. 🤤😁
Banana pudding is layers of the vanilla custard you may have gotten, vanilla wafers (a small round cookie) and bananas cut the size and shape of the cookies. The only cooking is the custard which then has to cool and set in the refrigerator before layering with the cookies and bananas.

I can even eat it cold it's so good. For a real Southern Meal, cook up a pot of pinto beans with a ham hock. If you use dry beans, you have to cook them overnight. Otherwise, just open a can of them. Serve with your Spoon bread. That's what we call Corn pudding. And green onions for some crunchy bites. And we even some green beans in with the pinto beans. Freshly picked are the best. And add Texas Sweet Tea. And you have a perfectly complete Southern Meal. The day after cooking the beans and ham hock, they even taste better! If you want a classic dessert...make a real Pecan Pie. A Southern favorite. This meal is a staple in the South. Made many times a month! Yum. ❤

The chicken wasn't fried chicken pieces. It was a flattened chicken breast. Breaded like fried chicken covered in that white creamy gravy with sausage. My fav is chicken fried STEAK. A pounded out steak is breaded with fried chicken mix. Fried. Covered with the famous white cream sausage gravy. I'm from the south. In college, the best thing to order was French fries or onion rings covered in cream gravy. I promise you it's a carb wipeout!!! FYI. They dry out the sweet potato chips in paper towels. Then, bread them in a flour mix. Look up a recipe!
I love collard greens. Of all the greens we have here in the South (excepting spinach and lettuces), it is the least bitter. It is a little bit bitter, though, and very "green" tasting. HOWEVER, you can stew them with ham or fatback and replace a lot of the flavor with that of the ham. My favorite way to eat them, though, is to do a brief blanching, drain and squeeze with a tea towel, then add to a pot where you've sautèed garlic in olive oil. Sautèe briefly, season with salt, pepper, and a pinch of sugar, then add a few dashes of Tabasco sauce. DELICIOUS!

Then cook on your grill. It's so tasty! Zesty! Try it! The brand name we use is Wishbone Italian Dressing. ASK your neighbors for some. Also, there is something called baked fried chicken. It's so very good. You can even marinate it in the Italian dressing. Then Coat it in flour. Obviously, find a good recipe to follow. It's so good! Almost my favorite after Fried chicken!

They are a difficult vegetable to prepare, but the British were the ones who brought them to America shortly after Plymouth Bay colony was established. To make collards correctly you have to cook them with ham or fatback. Do not add lemon. Even some in the south have never learned to make them properly. Also, you need to harvest them at a certain time of year to lessen their bitterness.
No, the greens should NOT be bitter. They should have a bite but they shouldn't bite you back, lol. Until I saw their video, I've never known anyone to make turnip or collard greens with lemon. They should be made with a ham hock, a chunk of ham or even some sliced bacon and a splash of vinegar and MAYBE some red pepper flakes. My mom makes the BEST greens. She's 84 years old and has NEVER heard of anyone making them with lemon. I don't know if you saw their Thanksgiving video but they had the Pie guy from Mississippi make them his version of classic Thanksgiving and he made them collards and they loved them more than any other greens they'd had. 08JAN25 On collard greens, they have a natural bitterness which can be cut with lemon juice and yes they can sometimes get a vomit taste about them. On really crispy fries, cornstarch and double fry them.

I think this from the time Josh and Olly were in the South the first time. Now if y'all want to see them suffering when they're eating the food, watch that Prince's Hot Chicken episode. The mild was hot for them.
I was looking to see where the nearest places you could find Catfish are. Yours wouldn't be the variety that we have in the states. Ours are Blue, Channel, flathead. Yours are the Wels Catfish in Europe. Germany, France, Spain and some other countries do have them. I don't know if any other places closer to you gets them or not. You can always ask at the grocery store with the managers, maybe your butcher and see if they know if it is possible to get a catfish or two at a decent price. Because importing them from the USA or exporting them to Sweden, yeah...I looked into that. You would have to be insanely rich to afford that one. However, there are plenty of species of fish that you can catch and do as a smoked fish in the smoker. Salmon, Sturgeon, Pike....all delicious tasting fish that you can catch or buy (I don't know what the laws are in Sweden with individuals fishing). There are some others like Carp that would be good for frying. So, you could still do some American style recipes with fish that we do have over here as well. Common Carp or Grass Carp. We have. Sturgeon, Salmon, Pike, we have. So, I hope that helps.

I DO NOT recommend frozen catfish. Catfish is just not good after frozen. I like both grits and corn pudding. The waitress was being genuine. I’ve experienced this many times. Sweet potato fries are wonderful! You should make them if you have sweet potatoes. My mom makes a special sauce to dip them in: Mayo, Dijon mustard(or horseradish mustard), tiny amount of ketchup, and a little soy sauce. It’s real good.

Catfish are bottom feeders; for some reason they are a huge thing in the south, but I grew up in North Dakota and we don't eat bottom feeders there. This affects me now, because I'm currently located in Maryland for work, and they do 'fish Fridays', but they only do Catfish or Flounder.... Bottom feeders. Turns out they'll cook a Cod for me, but I need to let them know ahead of time. I'm just a no on catfish; anything that gets its food from mud isn't something I want to eat. (Mud underwater is all of the detritus (waste, figure it out) from all the other things in the water. Just NO. You're eating all the sh!t of everything in the water, I don't want to eat you.

They fry sweet potatoes twice on low temp to cool them through then jack the temp up to flash fry to get crispy

She's 84 years old and has NEVER heard of anyone making them with lemon. I don't know if you saw their Thanksgiving video but they had the Pie guy from Mississippi make them his version of classic Thanksgiving and he made them collards and they loved them more than any other greens they'd had.
I don't do corn pudding either. It's totally a texture thing but I would think it's similar to creamed corn if you baked it.

Corn pudding
3 Tablespoons unsalted butter, melted
* 1 (15 oz) can whole kernel corn, drained
* 1 (15 oz) can cream style sweet corn, not drained
* 1/2 cup granulated sugar
* pinch of salt
* 1/4 teaspoon vanilla extract
* 3 beaten eggs
* 1/4 cup all-purpose flour
* ground cinnamon (optional)
* Preheat oven to 400°F.
* Add butter to a large microwave-safe mixing bowl and heat in the microwave just until butter melts (30-45 seconds).
* Add drained whole kernel corn, cream style sweet corn, sugar, salt, vanilla extract, and beaten eggs to the mixing bowl. Stir ingredients together until well combined.
* Sift the flour into the bowl then stir well to incorporate.
* Spray 8×8 glass baking dish with non-stick cooking spray. Pour corn pudding mixture into the baking dish and sprinkle the top with a little cinnamon (if desired).
* Bake uncovered for 40-50 minutes. The corn pudding is done once the sides turn golden brown and the center has firmed up, but still jiggles a little. It will continue to firm up as it cools.
* Remove from oven and allow corn pudding to set for 10-15 minutes before serving. Serve warm and enjoy!

08JAN25 On collard greens, they have a natural bitterness which can be cut with lemon juice and yes they can sometimes get a vomit taste about them.
On really crispy fries, cornstarch and double fry them.

I was looking to see where the nearest places you could find Catfish are.
Yours wouldn't be the variety that we have in the states.
Ours are Blue, Channel, flathead.
Yours are the Wels Catfish in Europe.
Germany, France, Spain and some other countries do have them. I don't know if any other places closer to you gets them or not.
You can always ask at the grocery store with the managers, maybe your butcher and see if they know if it is possible to get a catfish or two at a decent price.
Because importing them from the USA or exporting them to Sweden, yeah...I looked into that. You would have to be insanely rich to afford that one. However, there are plenty of species of fish that you can catch and do as a smoked fish in the smoker.
Salmon, Sturgeon, Pike....all delicious tasting fish that you can catch or buy (I don't know what the laws are in Sweden with individuals fishing). There are some others like Carp that would be good for frying.
So, you could still do some American style recipes with fish that we do have over here as well.
Common Carp or Grass Carp. We have. Sturgeon, Salmon, Pike, we have.

I DO NOT recommend frozen catfish. Catfish is just not good after frozen. I like both grits and corn pudding. The waitress was being genuine. I’ve experienced this many times. Sweet potato fries are wonderful! You should make them if you have sweet potatoes. My mom makes a special sauce to dip them in: Mayo, Dijon mustard(or horseradish mustard), tiny amount of ketchup, and a little soy sauce. It’s real good.

Oh, Carol, you look like you're tortured. I never take my southern roots for granted. Love this food. It was shocking to me that catfish are not available where you are. Catfish is such a staple of my diet. I guess you have other flaky white fish.
Olly is like a 2 year old kid who only likes bland, tasteless food. He is such a child when it comes to making faces when he doesn’t like something. Such a baby.

Too bad you are allergic to pecans. They really are good. I like walnuts, cashews, pistachios, and more. You aren't allergic to all of them, are you?

Carol, chicken breast pounded thin, seasoned, breaded and then fried is heaven. Double win if you cover it in white gravy with cornbread on the side.
It's funny that I am landlocked and cannot get fresh seafood easily, but the one fish I can get fresh is catfish and I don't really care for it.

Catfish are bottom feeders; for some reason they are a huge thing in the south, but I grew up in North Dakota and we don't eat bottom feeders there. This affects me now, because I'm currently located in Maryland for work, and they do 'fish Fridays', but they only do Catfish or Flounder.... Bottom feeders. Turns out they'll cook a Cod for me, but I need to let them know ahead of time. I'm just a no on catfish; anything that gets its food from mud isn't something I want to eat. (Mud underwater is all of the detritus (waste, figure it out) from all the other things in the water. Just NO. You're eating all the sh!t of everything in the water, I don't want to eat you.
