Hi Lindsey (hope I spelt it right), I don’t know if you’ll ever see this but I thought I might give it a go anyway. I made the red velvet cheesecake cake two days ago for my brother’s birthday and it was PERFECT. Only question I have is that my icing became runny extremely quickly. I live in Singapore where the weather is over 30 degrees celcius, but I’m not sure if that’s the reason my icing was runny. Do you have any tips on how to keep a thick frosting without losing the flavour?
