Now this I can kind of wrap my head around. There was another tutorial I watched earlier where they did it all with geometry nodes and I was completely lost from the start.

That looks so yummy and real. Please let me know how did you get the chocolate layer spiral for the right side one below the caramel shell chocolate?
Thank you very much :) That one is really easy: create a sphere for the chocolate. Now in edit mode, select some edge loops and duplicate them (shift D). Now separate them from the mesh (p). Then convert them into curves (object menu - convert- curve). with the new curves selected, go in the "object data properties" panel on the right, and increase the depth of the bevel.
