  • Since in certain parts of the world you cannot find the HOPS and some want to try to make beer as it was made 500 years ago, today we see how to make beer at home using other herbs instead of hops.
    You will need:

    Water 10.5 liters - 2,77 gallons

    Ok, I have now made this. I took your advice and doubled the artichoke leaves. I tasted it before bottling and found the rosemary was overpowering. After a few weeks in the bottle it has mellowed out and is now quite balanced. I find that it actually tastes more like cider than beer! I was pleasantly surprised.

    Your doing an exceptionally great job here with the wine thing. You can incorporate things like salad cream, chocolates, ice cream, pasta, bread spreads, jam and tomato sauce with other Italian reciepe and productions for developing countries to learn for small scale industrial productions. People are hungry to learn new things everyday, likewise myself. Once again, a big thumbs up to you for your great work.

    You may want to try Jaggery Ale:
    1.2kg Pale Ale Malt
    400gm Jaggery
    200gm oats
    20-25gm Goldings Hops
    10gm Ale East
    8L water
    Final close to 7L Beer with 6% ABV. You may improve this better for the video ☺️

    Yarrow, I bought a plant a few years ago. It's not hops but has a refreshing flavour and is the original gruit. I also use hops and in fact sometimes mix the two plants. Hops is expensive where I live. In fact it's the most expensive part of making the beer for me.
    For dark beer I would recommend the toasted peel of an orange.

    I don't like hops for the estrogenic effects. Video was interesting. I like the juniper berries and want to try a beer with those.

    Gruit is a combination of herbs, commonly including:
    Common heather (Calluna vulgaris).
    Ground ivy (Glechoma hederacea)
    Horehound (Marrubium vulgare)
    Mugwort (Artemisia vulgaris)
    Sweet gale (Myrica gale)
    Yarrow (Achillea millefolium)
    Gruit varied somewhat; each gruit producer included different herbs to produce unique flavors and effects. Other adjunct herbs include juniper berries, ginger, caraway seed, aniseed, nutmeg, cinnamon, mint, and occasionally hops in variable proportions (although gruit today is often sought out for lacking hops).

      I've never seen them add rosemary and laurel. I don't know if they are those plants but they seem. Interesting how it turned out even though I didn't sanitize much of what I used. And I add sugar by hand 😯... Traducción español-inglés

      In theory forever but if you take some infection ( if your beer is not good) you must start from new yeast

    When you collect the yeast in the jar at the end of the fermentation.. do you use all the yeast that you collect for the next fermentations and must those fermentations be the same amount of litres as in this. ( 1 jar for 5 liters +/- )?

    I have to do it :-) but one "but" - 500 years ago people did not know sugar, so if you want to do it in traditional way, you should use honey instead of sugar... Greetings from Poland :-)

    Can we use wheat? I don't know if biscuit malt and pilsner malt is readily available in India.

      i am no expert (yet :D), eg. i didnt brew any beer so far, but be sure that wheat will dramatically change the flavor profile of wort and subsequently of your beer. Personally Weiβbeer/Weizen (wheat beer) i like but probably it is not somehthing you are looing for as an outcome of this recipe

      Yes but the result will be different, you can use any barley malt available in India, like pale malt

    I've been wondering, why put the hot water over the grain and separate? Why not bag the grain in cheesecloth and boil, then remove?

      Yes, you can absolutely do that. The technique is called: Brew in a Bag, or BIAB for short. For these small batches, it is definitely a thing. For larger batches, the bag gets heavy quickly, but it works great for smaller setups.
