Ramsay was trained by a French chef who was way worse than this. Entering into a top chefs kitchen is like entering into the military. The demand the best out of you.

French chefs are monsters if they're running a high end kitchen. Perfection is demanded. Like you said, it's like the military. In order to have an effective squad, everyone needs to be at 100% at all times. One person slacking will get everyone killed.
A contestant did try to slap Gordon once, he effortlessly caught it like it was nothing while calmly saying to her "don't be stupid". Gordon is a black belt and is respected in the European martial arts community. As for why he treats them like that its actually a love tap compared to how Gordon was trained. There's stories of his teacher throwing red hot skillets at his staff, pouring pasta sauce all over a chef and physically slapping people. Apparently it was quite common for top chefs to treat their students like this as they strive for absolute perfection and only the people who can handle the abuse are deemed worthy enough to be in their kitchen, idk how it is now but that's how it was when Gordon was coming up and he's moved away from most of that stuff as in his own words it isn't right to treat people that way so instead he keeps it verbal but also acknowledges when they do something right so they know he's only yelling cause he knows they can do better
To put things into perspective, Gordon has earned 16 Michelin Stars, while Bobby Flay has only earned 1 star. In addition, only 2 other Chefs have ever earned more Michelin Stars than Gordon Ramsay
Although it's still a terrible management style, I agree. He only yells at chefs when they have bad attitude (talk back, get defensive, are lazy, etc). When people genuinely mess up but want to improve, he never yells at them.

Gordon Ramsey on these type of TV shows with his fiery temper is an absolute world away from his persona out of the kitchen. He is a family man, he and his wife have five children together. A completely different character doing cookery shows with children too, he actually has a lovely nurturing manner with them.
