The "peanut" sauce which you put into your bowl of soup noodles originates from Chiu Chow an area in the north eastern end of Guangdong province. It is actually ground-up peanuts, ground-up dried shrimp and ground- up chili, garlic etc. mixed in sesame oil. The sauce helps to spice up and brings umami to whatever you are eating and complements your beef ball, beef slices noodles. This particular sauce called 沙茶醬 (pronounced as Sha Cha ) is also popular in Southeast Asia having been introduced by Chiu Chow Chinese emigrating into these countries in the last century or so. As both of you are so open-minded with various types of food, you will enjoy your culinary adventure in Guangzhou.
Being of Teochew heritage, I think you're wrong about the shacha sauce, which traces its origin back to the satay sauce, brought home to Swatow by returnees from Southeast Asia.
