Also made me ask why we are never really curious about the people behind our favourite dishes at restaurants, and rarely ever know about chefs other than those who come on TV or contribute recipes to magazines. In DC, Rasika, for example, showcases regional cuisine including a simple modified Bengali macher jhol and also what they call Kolkata chicken curry. I also so respect your commitment to thinking about labor and better wages for those who cook and those who have cooked without due acknowledgement, Thank you.
Loved Koyel's effort and her cooking. Many old recipes are disappearing even from home kitchens. Bong Eats bring them back and it's a feast for my eyes. People may not try out such recipes at restaurants a-la-carte but chefs can think about including such authentic and nostalgic recipes in buffet as "Gram Banglar Shaad" or "Thakur barir ranna" for instance.

very interesting episode. the discussions are again, the cornerstone. kochu is not a well or widely accepted ingredient in Bengali households, and I would say there is a great divide between families who can go to any extent to savour this amazing ingredient, and others who would have it once in a while (or dare to) during the entire year. Of course, "bangals" tend to have the edge on the variety (imho) of cuisine, this ingredient that grows in plenty in this moist land must be leveraged to an elite ingredient.

Really loved the video. Was waiting for a rannaghare ke episode for a long time. The ads did affect my viewing experience. But it was very satisfying to watch ranna with adda.

very interesting episode. the discussions are again, the cornerstone. kochu is not a well or widely accepted ingredient in Bengali households, and I would say there is a great divide between families who can go to any extent to savour this amazing ingredient, and others who would have it once in a while (or dare to) during the entire year. Of course, "bangals" tend to have the edge on the variety (imho) of cuisine, this ingredient that grows in plenty in this moist land must be leveraged to an elite ingredient.
