first of all, you are just here to hate, second of all, humans are not perfect we have flaws and most of us sin every second we spend on earth. May Allah Subhanahu Wa Ta'ala guide us all with rightful knowledge.
He did not say humans are the only creature to "disobey" God. He said at 16:32 "the only being in this universe that refuses to prostrate before God is the human being". Regarding the Jinn, even Shaitan and his followers among the Jinn did not refuse to prostrate to God. As for the the angels vs humans, again, you are misquoting him. He quoted a hadeeth by saying the most number of creatures God has created are the angels, at 9:24. At 17:26, he quotes another hadeeth by saying their bodies do not get fatigued and they do not get distracted. He explains Humans can be ashraful makhlooq ("best of creation"), by overcoming their Earthly limitations by the power of their soul/will. Anyhow, when one is speaking for over 40 minutes, they are bound to be minor slips of tongue. Look how many slips of tongue you made in your single comment alone, despite having the ability to review and edit it!
