@@nagarajdn7385 Yes, also I didn't know about adding Akki hittu and sugar to the batter. That is also equally important for the crispiness of the dosa
For Phudoo making v used to add 2 table spoon rice flour & one teaspoon sugar. For dosa v used to add sugar. I have got sengotikallu from tamilnadu v used to get hotel style dosa, heat spread all side. It cost me ₹3,000/-.
@@nagarajdn7385 You are absolutely right. In our home flame from gas stove never spreads to entire tawa only middle portion of tawa gets more heat. In restaurants their tawa gets heat all over the surface equally.

Can u please tell me what is the dosa rice. Here in tamilnadu there is no such a rice. Only idly rice , raw rice and boiled rice of different varieties available
After adding the rice flour can we make the dosa immediately or we have to keep it for another 5-6 hours.

@@pareshrr I put rice flour after a few hours, here usually the batter takes about a day to ferment so I added the flour after 8 hours when the batter has started to ferment

Very true. I tried it became only eye wash. I got fooled with these dragging words.
It's based on tawa if we use non stick or cast iron we will not get hotel tawa are iron slab with smooth surface so even heating will be there so dosa comes in that way .
So Damn True. All these recipes turn out to be bogus.. I tried and wasted the whole batter. I guess to be Ekalavya you need a Great Drona first.. He missed the part where you need to keep it for fermentation overnight! Such instances make you hate everyone and everything around because of their incompetence to teach! Same goes for our schools too, we have uneducated incompetent teachers running students lives!
They will use sugar for that colour….
