About Marmalade
Marmalade is a fruit preserve made from the juice and peel of citrus fruits boiled with sugar and water. The well-known version is made from bitter orange. It is also made from lemons, limes, grapefruits, mandarins, sweet oranges, bergamots, and other citrus fruits, or a combination. Citrus is the most typical choice of fruit for marmalade, though historically the term has often been used for non-citrus preserves.
The preferred citrus fruit for marmalade production is the Spanish Seville or bitter orange, Citrus aurantium var. aurantium, prized for its high pectin content, which sets readily to the thick consistency expected of marmalade. The peel imparts a bitter taste.The word "marmalade" is borrowed from the Galician-Portuguese marmelada, from marmelo 'quince'.
Unlike jam, a large quantity of water is added to the fruit in a marmalade, the extra liquid being set by the high pectin content of the fruit.[citation needed] In this respect it is like a jelly, but whereas the fruit pulp and peel is strained out of a jelly to give it its characteristic clarity, it is retained in a marmalade. |

I like that every part of orange is used. Also, the peels of the oranges we juice from, can be dried and then grinded in a mixer into a smooth powder. Orange peels powder is great as an anti-tan or pigmentation and scar removal✌🏽

This one is unnecessarily complicated. I use seedless Navel Oranges, cut them up, pass through a food processor, add sugar, water, a touch of cinnamon, and juice of one lemon, bring to a simmer, cover and let stand overnight on the counter, next day cook until all the water is gone and that's it. Works every time and my wife and I love it. My favorite way to enjoy it is as an English Muffin sandwich.

The recipe is excellent, I make it with the same portions but in a different way. I pass the orange peel and segments through a meat grinding machine with a thick cutting blade. The consistency is very similar to this recipe.

Superb recipe.Thanks for sharing. I substitute jaggary for sugar in almost all recipes with sugar. It doesn't make much of a difference especially if one wants to avoid sugar as much as possible. Just a better option,I feel .

What other type of orange is comparable to the Kinnow orange? I live in California and I can't find this orange. Information online says that tangerines are comparable. If so , how many tangerines would I use, since they are smaller? Thank you.

Your recipe is good I tried it but it got crystallized after cooling don't know what went wrong
