How to make THAI MANGO STICKY RICE 🥭 --one of my favourite desserts! (Vegan)

- This Thai Mango Sticky Rice recipe is adapted from my Vegan Kitchen eBook. It's something I love to make in the summer because of the really sweet mangoes. Hope you enjoy it! :)

Here’s what you’ll need:
1 can 400ml coconut cream/milk (divided into 1 cup for the rice and 1/2 cup for the sauce)*
2 large ripe mangoes
Note: some coconut cream brands are watery, so those can work in place of coconut milk too.
Glutinous Coconut Rice
1 cup uncooked glutinous rice - amzn.to/3gzWHw9
1 cup coconut milk
1/4 cup sugar
1/2 tsp salt
Sauce
1/2 cup coconut milk
3 tbsp sugar
1 tsp cornstarch + 2 tsp water, diluted into a slurry

I just consumed fresh sweet sticky rice, no mango tonight, unfortunately.
The blog that linked here had a shorter steam time of 20 to 25 minutes based on 12 to 18 hour soak. This way seems more practical for my 2nd attempt.
I put the soaked rice into a cheesecloth and placed in a sieve with a loose fitting lid on the pot. about 1/4 full of boiling water.
I definitely needed another 5 to 10 more minutes steaming but it was delicious mixed with 400ml, the entire can, of coconut milk and 4 tablespoons organic cane sugar.
I could go on but who gives af. interesting process. beats having spent $15 at a restaurant even if I have some refining to do.
this recipe costs about $2 to $3 to make 3 portions from 1 cup thai sweet rice
I guess it’s a stupid question, but there is no glutinous rice where I live, can it be substituted by ordinary rice?

You can check in your nearby area to see if you have a Asian market. You can find it there

You will ruin the taste of it.. Only sticky rice can cook with coconut milk like this
You might get the taste but you won't get the right texture.im sure you can buy sticky rice online ❤

Does any rice work?
Yes, it's normally made with sticky/glutinous rice but any other white rice will do if you really can't get your hands on thai sticky rice ! The texture won't be the same but since the coconut milk syrup with hold the rice and make it sticky, it won't be that different !
I'd definitely say, use sticky rice, but if you have no other option, another rice will probably be fine (i once ran out of sticky rice and did it with thai long grain rice and it went surprisingly well)
Is this served hot or cold?
By the time you are finished slicing the mangos it will be lukewarm... Just gorgeous!
