Best Fasolakia - Greek Braised Green Beans

  • This is a lovely way to prepare fresh beans. A very simple preparation but a wonderful and savoury flavour. A great vegetable side dish or a light lunch when paired with some nice crusty bread, cheese and some olives.
    1 lb (500 mg) green beans
    1 lg onion, finely diced
    handful of parsley, chopped
    6 0z can (178 ml) tomato paste
    salt & pepper
    1/4 cup (80 ml) olive oil
    water, as needed

    I make something like this for breakfast. I use frozen cut green beans with about 1/8 pound of ground beef and plenty of salsa. Fry the hamburg just until it starts to show juice, then add the green beans and salsa and saute until the beans are fork-tender. Serve with a dollop of sour cream or plain yogurt.
