I just made it today for the first time and Honestly it's not even hard. It's just a lot of waiting so I was just watching videos while it cooked. I'd say baking is way more of long process and that's why I tapped out with it.
FYI when you put cheese on them, they're actually called "Quesabirrias" as in "quesadilla" which is a tortilla with cheese, birra tacos would be when you just put the birria in a tortilla.
