While I'm in favor of restoration and recycling, if I were to give my wife a table with the top full of holes, my marriage would need immediate restoration. And a simple question, is black epoxy to fill the voids a no-no on these types of projects?
I agree, and it would stop the birds nesting in the holes.

It's nice that they take care of the old wood.!👍 🙂 It only works in low wage countries. This clearly shows the disadvantage of high wage countries. Where small-scale craftsmanship no longer pays off. 😖

noone else spotted the whole in the middle from the centre screw that never went straight through?
The craftsmen are very highly skilled, especially working with such beaten up old wood. However, the items would still retain their original and rustic charm if all the holes were filled with wood filler or epoxy as this would prevent small items such as food falling into them and attracting insects, even nests.
