Never understood people saying theyre hard. I never bake anything except for macarons every once in a while and theyve never failed, they are sooo easy!

@@samsamsoup can be hard but if you have trouble with it I've heard of people piping inside of round cookie cutter shapes to get them all even!
@@alysker I've baked many things before, but I tried to do this twice as a teenager and it was and absolute fail. I wish it was easy for me cause they are pretty expensive,I'm glad you got it down tho.

I almost had a HEART ATTACK when she had the scalding melted sugar pan with the handle haging over the edge of the counter and started doing gymnastics!!!!😮😮 I am so glad she didn't bump the handle and have hot syrup fly onto her!!!😭💛 She did an amazing job on the donuts!
I love watching these videos because i was abused by my mom,and part of the abuse was at its peak when i would want to make myself food,she would be screaming,hitting me,cursing me,and taking charge not allowing me to do anything,im 26 and i get panic attacks when i try to make food in the kitchen.watching this video helps me see what a healthy mother-daughter relationship is like,and that making stains on a counter isnt going to kill nobody,and doesnt mean you should yell at someone or hit them or forbid them from making food because they stained something.
These kinds of videos make me very happy and shift the way i look at making food,kind of wiring my brain to associate making food with something positive,so yay❤ you two are lovely❤

Oh yes! My sister makes a gorgeous no-knead sourdough recipe and doesn't even buy bread anymore! And Mia can make simple butter with heavy cream and finished with flaky salt. It's very easy to make.

Love your videos! Little baking tip - you need a LOT more oil for frying donuts! That's why they got so dark before they were cooked in the middle (also probs needed a lower temp). It seems wasteful/excessive, but if the donuts don't have enough oil to float with at least a couple of inches between them and the bottom of the pan, you will overcook the outside and have raw inside. You can always put the oil into an empty container to reuse for another time/something else. Hope that helps for next time! But....I'm SUPER impressed at your first attempt at caramel and custard! Not easy to do and they both looked great!

Mia you are becoming a pro with everything. You went from beginner sewing to making beautiful garments and teaching us. Your baking skills are getting better too! I am not that good at baking so I understand. And I also took up sewing during Covid and getting better too. I am so happy to see you grow and watch you exceed is so many things in life. You have worked super hard and your consistency/discipline has been so inspiring. Cannot wait to see your future videos and how far you will go!
if you’re worried about dough touching the countertop, you should try using a silicone pastry mat. it won’t slip around as much :3

Mia a tip when Frying the donuts with tongs fill with oil and more And when you put them in the pan, put them with the side they were on, sprinkle with oil and they will swell, then turn

You should do either a chiffon cake or a red velvet cake. Both cakes would be a good challenge for you to try making. With the chiffon cake it’s all about getting the timing right with combining the cake batter and the meringue while still keeping the air in the meringue, it is a nice light cake. As for the red velvet cake it’s tricky to get the timing right with baking it and not having it be raw in the middle when you cut the top off of the layers of the cake before you assemble it.

Not difficult but can be SO fun: focaccia bread with veggie designs! Maybe you can try to make a variety of bread dips for it too, but I can see you having so much fun making the bread art

5:45 I think it thickens because of the eggs and sugar! The eggs cook slightly, so its just like when you bake an egg, except it doesn't actually cook all the way. I think sugar kind of works like gelatin but on a way smaller level. Maybe it thinkens a bit because of the fluid evaporating, but that probably won't do much. I don't know if this is right, but that's what I think

Haha I relate because lately I bring a chair in the kitchen while doing pancakes with dulce de leche (caramel sauce) and I know it's going to take a while. Plus, when I cook it's generally for everybody at home whether is sweet or salty. So I sit and drink 🧉 and study or watch videos 😄

Macrons, not to be confused with Macaroons u could also try making Spanish Creme, this separates into a creamy layer and a more jelly like layer, or make lemon curd.
use bi carb soda and apple cider vinigar to remove the vanilla stain off the bench. works all the time
put the bi carb soda on the bench then tip the apple cider vinigar on top and it fizzes and comes off
Looooved this series idea!! You can always make a Bienenstich, or beesting. It is also a custardy dessert but oh my goodness, so so so yummy! You have to try it if you haven't yet 🎉❤

I have a white bench top and everything stains. I spray it and let it soak for 5/10 minutes then wipe it off. Works everytime.

Hello Mia. My name is Amy Alexander and I am a Danish Pastrychef. I have watched you for a long time, I have never made donuts before and I got inspired to try it out, and now that you are baking I have a few difficult things I would love if you tried.
1. Filled chocolate made from real tempered chocolate and a ganache filling of any sort. Like peppermint, passion fruit, lemon, nougat, whatever sounds good to you. One of my favourite is baileys.
2. Real Danish pastries, with the many butter layers. The most famous one here in Denmark is called spandauer, it has either vanilla cream/custard with vanilla bean or a jam/marmalade of any flavour, raspberry is very popular also.
3. Either one big mousse cake or smaller made in a silicone mold with a shiny glaze poured over. Example I love experimenting so this weekend I am going to try out a blackberry mousse with a ganache of tiger spice chai on a chocolate cake.
Which would be perfect for the autumn season.
I hope you try some out, I love trying out new things. And I love others having fun doing so.

Macarons sound good, but chocolate eclairs are also challenging with the choux pastry. For a real challenge, real butter, made from scratch, croissants.
Nailed it. 🧦🧩🥇🎉🎊 Since fall's coming, I vote for New England apple crisp.
Ingredients
▢6 Granny Smith apples
▢1 cup 200 g sugar
▢¾ cup 90g flour
▢⅓ cup 80g butter, at room temperature
▢¼ cup 60ml water
▢1 teaspoon 5g ground cinnamon
▢½ teaspoon 2.5g fine salt
Instructions
Preheat your oven to 350°F (180°C)
Peel the apples and cut them into medium chunks. You should get about 10 chunks per apple -- it's okay if they aren't uniform. Make sure they aren't too small or you'll get applesauce instead of apple crisp! And if they're too large they'll be dry.
Place the apple chunks in a baking dish (8 inches). Drizzle the water over the apples, evenly.
Evenly sprinkle with the cinnamon and salt.
In a small bowl, mix together the flour and sugar.
Add the room temperature butter and mash with the back of a fork. You want to make a chunky paste with plenty of crumbs too.
Cover the apples with this mixture.
Bake for about 40 minutes until the top is golden brown and the apples are bubbling.
Serve with real vanilla ice cream (get the good stuff!)

Bartenders friend powder cleaner will get the stain off. Make a paste with it and water then let it sit for 5 minutes then use your hand to wipe off or an uncolored sponge (as that might stain your counter). Maybe use a scrub daddy which I've never seen leaks color.
you should try making your own boba tea from scratch! I've thought about attempting it myself someday but making all of the boba seems really tough

Japanese Melamine magic sponges are amazing for getting all the stains out of the surface. I live in Asia and use them all the time.
You did awesome with these, and they came out great, but as someone who has baked her entire life and studied WHY things react the way they do, some of this was almost physically painful XD
To answer a few of the questions you had, yes, your milk or water should be warm to help the yeast wake up a little faster. Yeast is a living bacteria, it's dried out and basically put into stasis, and you rehydrate it and feed it with flour (and usually some sugar) to get it to produce the gases that cause the rise. The rising of a yeasted baked good is basically caused by yeast farts lol. You CAN make a yeasted dough that's cold, but it takes longer. One of my favorite pizza dough recipes is an overnight dough that uses cold water and goes in the fridge, making a fermented dough (a bit sour, like a sourdough using an early starter)
The custard you made is actually a pastry cream - you got super lucky you didn't curdle the eggs, that's pretty easy to do. But eggs yolks, when they're cooked, thicken. Corn starch is also a thickener. I use it in place of flour sometimes, especially if I'm making something for one of my gluten sensitive friends. Bird's custard powder is almost entirely corn starch lol.
The science of baking is super fascinating and I really suggest that you have a look!

@@katharinaeisele327 haha, I find it quite fascinating really. They say baking is a science and it really is. Like egg whites - when you're whipping them up you're breaking down the proteins and reforming them, which is why they won't whip to a hard peak when there's any fat around. The fat bonds to the protein and prevents them from fully bonding. They also whip up better when they're at room temperature because the proteins are stickier, which is the opposite of whipping cream.
