Had to watch to see what dear Nick eats daily. Haha Nick, I eat 95% of what you eat and I could eat it all day long. Same as you though my cholesterol has gone up a lot. Watching your other videos, I could potentially be one of the so called "Lean mass, Hyper responder". I also eat home made sourdough bread, few veggies, onions, leeks, garlic and ginger is also ok. Do the Fage 5%. Used to be the Greek 10% but ok with the 5% now. Sardines tons of plus Anchovies, avocados, eggs, feta and the French cheese "R" you mentioned, raw and super delicious and tasty. And have been on macadamia nuts the past 3 weeks. Delicious. I can't wait to hear back with regards to the event taking place in LV in Feb. Exciting news! Thanks for sharing and best of luck. Stop with oils all together. Less olive oil, more olives. Less avocado oil, more avocados. The food matrix keeps these oils in their solid state where it's less prone to oxidation. It's the oxidation of LDL that's hurting us. Cook with fats that are solid at room temperature, like butter, ghee and tallow, not cooking oils.
When people talk about seed oils they are not referring to to walnuts or tahini… they normally are warning against soybean and rape seed oil which require an extreme level of processing… I use olive and avocado oil but I also grab a handful of a mix of chia, flax, and mustard seed with my sardine, olives, and spinach breakfast/ dinners …
Macadamia nuts! Yes, I love those! I could eat an entire 12 ounce can in one sitting. Cheese is great too. I like Jarlsberg and also Havarti. And i'm old enough to remember when McDonald's switched their french fry oil from beef tallow to seed oil, supposedly in the name of becoming healthier, back at a time when animal fat was villanized. Little did most people know at the time that the "unhealthy" thing was the fry itself, not the beef tallow.

The way to have dessert - fullfat yogurt with crushed nuts or dark chocolate. I love how he mentioned that.

Yeah whole food fats is better. Inshell bulk nuts in the freezer and fresh shelled weekly works for me.

Jeez, if I ate that amount of plant fats I’d get so sick. In fact, that’s exactly what happened. He’s young; hopefully he’ll learn.
