    Nduja with pasta I love, I have a buddy that gave me this long time ago, first time he came back from Italy with this stuff. Good bread. oil, balsamic and some other bits and bites, wine, nice sunny lunch day in the back yard. God bless.

    I have just made a batch of your Nduja, it has hung at 20 degree for 24 hour and is now in a separate room at 10-13 degree. All based on your previous video, cheers from Canada !!

    Looks good and I like your final presentation on the wooden table. It’s rustic and homey, like a photo from a very fancy italian cookbook.
    By the way, do you use acqua di cottura when tossing/incorporating your pasta with the sauce?

    I haven't seen your video on Nduja, I'll check it out right now. When I was cooking in New Orleans a smoked sausage from France called Andoulle was commonly used. The names sound similar but I've read that there's no smoked sausage used in Italy 🇮🇹

    Can you please show us how to prepare raw pork gut for salami making. In India I can ask the butcher for fresh gut. But I dont know how to clean it and make it ready for sausage and salami making.
