Old Fashioned Blackberry Cobbler

  • My mom made this cobbler anytime we needed an easy, quick dessert. Made with fresh, frozen, or canned fruit. Your folks will love it too!
    Fruit:
    2 cups fresh fruit with 3/4 cup sugar
    OR 2 cups frozen fruit, thawed, with 3/4 cup sugar
    OR 2 15oz cans fruit in light syrup - drain juice from one can (no added sugar)
    Cobbler:
    1/2 stick butter
    1 cup flour
    1 cup sugar
    1 cup milk
    1 tsp baking powder
    1 tsp vanilla
    Topping:
    1/4 cup sugar
    1 tsp cinnamon
    Mix sugar with fresh or thawed fruit and let sit for 1 hour.
    Preheat oven to 375 degrees.
    Melt butter in warming oven in 8 x 8 pan.
    Pour fruit into pan with melted butter.
    Mix remaining cobbler ingredients and pour over fruit.
    Do not stir.
    Sprinkle with topping.
    Bake for 45 minutes or until middle of cobbler is set.
    Serve with vanilla ice cream or whipped topping.
